My partner and I are regulars here and I mean like, at least once a week regular. The tacos are, quite literally, the best tacos we've found outside of our adventures in Mexico. The quality is consistent and the servers are top notch and even know us by name. South of Summit has great taco Tuesday and happy hour specials too. I cannot more highly recommend the happy hour barbacoa foldy, or the regular menu al pastor and carne asada tacos. Make sure you ask for the hot sauces with your chips and salsa and food because the other sauces are very delicious as well.

Took my girlfriend for her birthday dinner. The atmosphere is pretty cool. Chips and salsa are free, the salsa is smooth which I like. My girl said chicken tacos were good. I ordered the quesobirria tacos which come with beans and rice. I asked if I could do without the beans and get double rice, most restaurants have no problem with this but the waiter said the chef wouldn't do it like that. Meh ok that's fine just odd. The menu said beef and cheese only but the tacos had onions on them. I also felt the consommé was bland. Churros and ice cream were the best things we had. I felt the prices were fair. The overall experience was just ok.

Chicken burrito: Chicken was very salty. Overall ingredient combo not satisfying. Maybe too much texture chunk with salsa combing everything together? Or just too much salt? Salsa for chips is average - very tomatoey like a marinara. Salsa served with the burrito- same but the green is not horrible. Considered trying the pastor tacos as they are actually prepared traditionally but at $5 each, not likely to return.

My friends and I met for happy hour at South of Summit and had a lovely time!
I have to say what a SUPERB job Emily W. did as our server. She was efficient, attentive, and very responsive to all our requests. We weren't able to read the specials on the chalkboard as we came in, so Emily went over the entire menu with us and explained all the details for happy hour. She returned multiple times to refill our water glasses and chips bowl, and accommodated our requests (like dressing on the side) with a smile.
The food was very good; we each had different varieties of the tacos and enjoyed all of them. The flavors were fresh and we loved the homemade tortillas. The happy hour prices made them even more appealing. :-) The menu is somewhat limited, but you know that going in, since it's a taqueria.
The environment was welcoming and our seating area was spacious and comfortable. The only down side, which is shared with its sister property (Summit Grill), is that the high ceilings and open layout make it quite loud and sometimes difficult to talk over the ambient noise. The building design could use some method to dampen sound.
Overall, it was a lovely meal and especially made so by Emily's excellent care. Thanks to everyone at South of Summit!
Parking: We couldn't find any handicapped parking; since one of us was temporarily using a walker, that was a major difficulty. We ended up parking at the cleaners next door; they were very gracious and let us park there since they were closing for the day.

Lily was such a delight! Came in to celebrate my birthday. And she made it delightful. Great triple dip, shrimp tacos, and margaritas! We will be back soooo soon! (I live across the street. Lily is 90% of our big fat desire to come back soon!.

We visited for an early dinner to take advantage of the *daily* happy hour menu. The barbacoa tacos are amazing. All tacos are small - true street taco size - but loaded. We also tried the dip trio and argued about which one was best. Service was great, the margarita was perfectly sweet/salty, and the traffic at the to-go counter clearly indicated to us that after a year of living on the PV/Waldo border, we’ve finally found our local Mexican spot.

If you’re a Waldo resident, this should be in your normal rotation. As a vegetarian, I greatly appreciate their veggie options. I’ve always been thoroughly pleased with my meal and all the drinks I’ve tried. I would even make the drive here if it wasn’t in my neighborhood.

This place is alright. Not bad, but not particularly good. I went here for restaurant week one year and got tacos and sides. Guac was really good, chips were good, but besides that the tacos were just okay. Not what I'd call authentic, and in a town with a lot of good. authentic Mexican food it just doesn't hold up. Probably not a place I'll revisit.

I have lived in the area for 8 years, but I have never visited south of Summit before. Each of my three tacos was incredible. I had the fish, the mushroom, and the chicken. Not only were they loaded, but they were delicious. And their chips just might be the best of any place I've been in Kansas
