I ordered the bison sausage, with sauerkraut and grilled o’s plus the homemade sweet mustard. Outstanding, even the bun leaped above the bar. My buddy, a professional chef, had the elk. Fantastic, he said. He told me that sausage is a tricky science, and Jonathan at Schudogs is the best sausage-maker, in any direction, for a long long way. I was a convinced as clergy.
