Quality of pasties is absolutely fantastic. Same for all the bread I've tried. The only reason they aren't 5 stars is the size of the pasties, especially the chocolate croissant and the cardamom knot, has shrunk A LOT. Not really worth the price and I probably won't go as often anymore.
I don’t know what kind of voodoo you guys practice back there in your secret workshop, but the spoils are magic! Please don’t start replications and scaling plans, we need your tiny, toil, boil and bubbling experiments to keep those of us out here in the real world sane. ❤️

I had a savory danish (ham, Gouda, collards) and spelt bread (resembling ciabatta). So. Good.
Please let me know when the retail shop will be open! I will gladly drive 500 miles to try more offerings!
I have only had one product from Grist, but if I could give it six stars I would. The sesame fennel Rye bread is some of the most delicious bread/toast I’ve ever had. And I’ve had a lot of bread! Can’t wait to try more. YUM!
I have never eaten or purchased anything from Grist - but I will offer some friendly free advice in celebration of your upcoming move. I used to patronize Bernice’s but during the last year they have priced me out of their products. Yes, is Bernice’s higher quality than Rosauers? Of course, but not at 3 to 4 times the price for similar product. So keep pricing very much in mind!! Good luck with your move.

I’m adding my review only because I can’t stand seeing Grist with a 4.9 star rating. I seek out bakeries all over the western US, and Western Europe (don’t get me started on Northern European and Eastern European bread… it’s just not for me), and Grist is my favorite bakery. You folks in Missoula are so lucky! I may actually drive two days from LA when apricots are in season just to have their apricot danish.
The croissants from this bakery are delightful delicious. A buttery, crispy crust that shatters with every bite, revealing a soft and flaky interior. These pastries are a must-try for anyone craving a French-quality croissant. I would enjoy these daily if I lived here.
Literally the best bread I've ever had. And I've been a lot of places and eaten a a lot of bread. I can't even make sense of how it's so perfect. Texture, perfect level or sourness, nuttyness/blend of grain, its everything.
This review is for 4/24/23. Grist Milling doesn't sell at this location, but they sell their stuff at Black Coffee Roasting company which today is accurately shown on map in the wren hotel. So no Grist retail at this location. This confusion has likely led to the low number of reviews, or reviews being confounded with the other coffee business.I ordered a plain croissant, almond croissant, scone, and danish. I could tell from the look that the croissants were likely to be good, as they should be flaky and that should be somewhat obvious. It was excellent. Really, there aren't too many places that make them this good. Certainly not in Missoula, but honestly, not many places anywhere. Croissants are subtle and it's a lot about texture, and they are laborious, so many people don't make them well. These folks do. And the only way to really know is to order the plain one. The almond croissant is of a typical style, in that it's twice baked (cut in half and loaded) instead of loaded and baked in one step. The higher end places do this, but it's not my particular preference, so I tend to avoid these, but felt I needed to try it. It was quite good. I ordered the scone because scones are much harder to do correctly than meets the eye. It's easy to make an average scone hard to make a good one. Scone was also quite good. Savory danish also quite good. Really, this is the place in Missoula right now for pastries, and I suspect eventually people will start reviewing once the confusion over who you are reviewing is relieved. Enjoy. This stuff is really, really good.

So I first got to try the Grist bread by having some sandwhiches in Stevensville at a little place called Ahava Coffee. I was in love with the first bite, and they told me where they get their bread. So off I went to Missoula to try and buy some. So far, I keep getting skunked. So, I wasn't sure about doing 3 stars...since I haven't actually been able to catch them open and try it all out. So my stars are based on another place ( which was awesome, by the way) where I got to try their product. I hope to add more stars someday. This most recent time I went by there, the hours said close at 2, but just before 1 the doors were locked, chairs were up and workers were standing behind counter.... Possibly discussing how silly we and two others that showed up looked trying to open their door. ????????????????☕️☕️
The croissants are perfection
Well after about 20 people told me about these amazing almond croissants I decided I needed to try them for myself. I went to black coffee at around 9 am and immediately realized I need to come earlier in the morning. There were only a handful of baked goods left! I was able to grab a muffin and regular croissant and they were absolutely amazing. I should have bought more, they went so fast. I will be back soon, I want to try the famous almond croissant! My only gripe is that I don’t know where and when I need to be to buy an assortment of their baked goods.
Hands down best pasties and breads in Missoula!!! They have mastered the art with their 5 star ingredients and techniques Seriously!!!!!!!! Love the coffee too. Thank you
Good substantial loaves of bread. You can tell there is a lot of work that goes in to each loaf. Makes great toast with butter and jam. Highly recommend.
