My whole family loves this spot! First thing I noticed were the floor was seemed very dirty, especially from what I could see in a back room I assume was there kitchen area . The service lady only smiled at the end when we were paying the rest of the time seemed not happy to be working. I understand sometimes employers don't pay us enough to be happy or we are just having a bad day but still effects the feel. The food came out quickly and tasted fairly good.About 10 hours after eating me and my wife have gotten very sick with vomiting, diarrhea and several other symptoms, it hit us out of no where at almost the exact same time. No one else at our house is sick today but we were the only ones that went out to one noodle to eat. It's very possible we have the flue or something else but it does feel like food poisoning.I called to warn them, I asked for nothing and I did not once hear any empathy for being sick and instead they seemed combative about it. Sense I am not trying to get anything from them it was just easier to hang up and leave a review.

Went here on recommendation of some coworkers and it was really great. The server was super friendly and helpful as we had some questions. The food was great. Lots of different options and everything was delicious. We had Pad Thai, Drunken Noodles and the Spring rolls. The portions were large, we ended up taking some home, which was tough to do because it was so yummy! Will definitely be back

If you're wanting to try Pho in the Fredericton area, this is the place to go. Several co-workers and I frequent No. 1 Noodle and find the food to be wonderful, and the owner and staff to be a delight.

Angry girls working the floor.Also the food is not worth the price.Pad thai isnt real pad thai.They have two cultures they are service thai and vietnamese and crossing a little of both and yet neither taste legit.Shame for such an expensive meal.

Our server was a wonderful young man who was full of goodwill and energy. Food was wonderful, full of flavour and so light it was a lovely experience . Was here when they first opened. Is it really 10 yrs already. Wow, great job !

Fusion pho is very creative, curry sauce from Dollarama on rice. $5 for empty sharing bowl, Amazing!!! Never heard of in Canada. Must try once in your life.

I'm Vietnamese, from a big city with some great Vietnamese food. I've been visiting Vietnam regularly over the years. So, when I came here, I didn't set my expectations too high, even though this place had great reviews. It's a smaller town with less competition, after all. To put it plainly, if you're not a frequent Vietnamese foodie, you might find this place alright. But trust me, you don't need to be Vietnamese to notice that they're missing out on some essential Vietnamese flavors.Let's talk about the lunch special Chicken Vermicelli bowl. It was the only thing we ordered that didn't disappoint too much. It's reasonably priced at $14.95 and comes in a generous portion with plenty of chicken. But, truth be told, the chicken lacked a punch in the flavor department. I'm used to loads of fresh herbs like basil and cilantro, which were obviously absent. It felt like they took the easy route with a basic marinade.Now, onto the lunch special beef pho. When this dish arrived, the size difference compared to the vermicelli bowl was startling. Same price, $14.95, but this pho portion was shockingly small – almost like a personal sized bowl. The broth was okay, but it had a bit too much ginger for my taste. They boast about using a 9 hour stock with fresh herbs, cilantro, and basil, but guess what? None of those signature pho elements were in sight. I think there were some friend wontons but there was no filling at all. It was all wrappers . The picture attached has a spoon for size reference as the first photo is deceiving due to the angle.And then there were the spring rolls. As soon as I walked in, I had to ask if they used egg paper or rice paper. The server assured me it was rice paper that's the only reason I wanted them. Turns out, they weren't rice paper rolls, and the taste was just ok.In a nutshell, if you're not too familiar with authentic Vietnamese cuisine, this place might do the trick. But if you've savored the real deal before, you'll probably feel like something's missing here.

This wonderful Asian food is always delicious, and the menu has a wide variety of choices. You can add hotter spice to your meal if you like, or keep it mild. I really appreciate that there is a separate vegan menu. My fave is the vegan Pad Thai with tofu. There is something for almost everyone, and the staff is friendly and just the right amount of attentive. They do a booming business in takeout, too. A great addition to the city.

Without too much extra "fluff" No. 1 noodle delivers Frederictons best Thai curry and an excellent bowl of Pho. This is one of a select few "go-to" spots when it comes to Asian cuisine in the capital city, and it does so at a decent price.PS: bonus points for having a variety of flavour boosters and hot sauces at every table
