Happy Baker used to be consistently good for pretty much everything, but then it sold and since the original chef has moved on, you can definitely taste the difference. They recently changed the sandwich menu, which is unfortunate, so I reluctantly tried a new one and it was so gross salty - I could see the salt piled on top of the tomatoes, and there was so much mayo I could barely get through it. I also tried the cream of mushroom soup and it honestly was so disgusting in taste and consistency, that neither myself nor my friend could eat it. My meal was $26! It's really disappointing to see this staple in the community fall below its own standards, which seems to be common here. I will say that so far, the small pastries and breads seem unchanged, and hopefully they remain that way. HB was our go-to sandwich shop/lunch spot but we won't be going for soups or sando's anymore.

We’ve always loved Happy Baker, but unfortunately, we had a disappointing experience recently. The bread roll that came with the soup had mold on it. This was quite surprising and really impacted the meal. We hope this was just a one-time issue, as we usually enjoy their food.

My review is strictly for the gelato
My wife and I love gelato we went to Italy and that was our dessert every night, when we found out that they made it here in Fredericton we were really excited
We were told it would be available in July so we waited a month and went back and got two scoops of the “gelato”. All I can say is they’re lying to everybody by calling it gelato.
I threw two scoops out after tasting it. What a waste of money.
If you like the fake gelato that’s great but it’s not gelato that’s not the way it’s supposed to taste it’s not the texture either I’m really disappointed.
Everything in this bakery is fantastic the bread the sandwiches and cakes are wonderful. We will be coming back to buy other items, just not the so called gelato.

If I could give 0 stars I would the cake done for my daughters gender reveal in 2023 looked like it had been written by a 5 year old AND they couldn’t even put pink icing in it like we had discussed and ruined my gender reveal for me and my family… I had to do my own writing on my cake while I was 20 weeks pregnant and working full time. The whole point of us ordering a cake was to take the responsibility off of us so it would be easier we wasted our time and our cake looked horrible all for 40$ !!!

My friend and I stopped in to get some treats... Staff were very rude! Giving dirty looks and making comments. When we asked if there was a wash room one of the staff very rudely with a grin said they were out of service... I think she assumed we just came in to use the washroom. Cookies and tart weren't very great and way to pricey for the taste. Definitely need to train staff on proper customer service.

The ice cream is pretty good for standard hard serve ice cream, but the one baked tart treat was basically all tart and no flavour even though it was supposed to be a cream cheese filled one there wasn’t any. I mentioned to them there wasn’t any filling and the person working said that’s just how they are, I asked to switch for another or something else and she said I’d have to pay. Guess I’ll stick to their ice cream next time.

Came here for breakfast with my girlfriend and her mom but could definitely come for lunch and dessert as well. They have a very large assortment of ice cream flavors, all which look delicious. As far as breakfast goes I personally got the Texas Ranger breakfast sandwich and it's honestly one of the best breakfast sandwiches I've ever had. The beef brisket was tender and flavorful, the chipotle aioli was delicious, and the egg was cooked perfectly. Highly recommend this place for a nice sit down breakfast spot
They have so many baked goods! Cookies, cakes, blondies, brownies, pies (savory or sweet), breads, pastries, sticky buns, sandwiches and even an ice cream stand (gelato option too)!
They have many flavours for ice cream and gelato. You can opt to make an ice cream sandwich in between two cookies (choose your cookies and your ice cream flavour). We didn't like it much as the cookies were rock hard and it was not convenient to eat it as a sandwich (ice cream was good though).
We also tried the sticky bun (with maple glaze I believe), which was very good.
Will return to try some of their other goodies.
Update: Their muffins are very dense and moist. Not overly sweet like at Tim's. You can tell it's homemade. Their soft cookies are good!

Got a custom cake ordered for my birthday and had it delivered to my place of work. The cake was absolutely delicious and people keep asking me where I got it from too! Holly the catering manager, is supper friendly and so easy to work with, the price was extremely reasonable too! Duncan, the delivery driver, was very thoughtful regarding bringing it into my place of work as wel as making sure nothing dropped or spilled! Superb customer service all around and I will be recommending this to my friends and coworkers to order from here!

I was very impressed to see the ice cream varieties, amazing! We also tried the brownie cheese cake and peanut butter balls, everything was delicious.
