Perfect spot for a low key solo outing. I came here on Saturday night in the mood for a good cocktail somewhere new. It's in the heart of downtown, right across from the dueling piano bar and was about a mile from the hotel where I stayed. I found some street parking a block away. Luckily it was relatively warm so I didn't mind the walk over. Sovereign is dark but inviting and was pretty crowded as expected on a Saturday but I sat at the lounge/sofa area right up front and enjoyed my beverage while finishing up my most recent book. They have a bunch of great classic options as well as some creative offerings as well as standard beer and wine picks. I opted for the Now We Dance (tequila, triple sec, coconut milk, rosemary syrup, lime, smoked salt rim) and it did not disappoint. My server was nice and friendly and checked in on my a couple times before I was ready to close out. I was tempted to try the wine port, but I ended up checking out another spot instead. It’s pricey but worth every penny for the experience and flavor! I will definitely come back here though - they have a food menu too and a Sunday brunch that I would love to try next time.

This poor place. It’s a great place when it is stocked with food and wine. There are five mains on the menu and only two available tonight. The red wine menu (glass or bottle) only three of the six wines available. It’s not even tourist season at the beginning of March and they are having these problems. Finally giving up on it which is sad because the service is always great.

Came here with a group of 8 on a Saturday night and they were able to find all of us seats, not together but close by! It would be perfect for a cozy, romantic date night. Its got a really cool apothecary vibe and a great selection of cocktails. The coconut tequila cocktail was FANTASTIC. I also saw they did brunch, which I would totally go back for.

3rd time here and it's great everytime. Never tried the food just drinks and they are good. Warren the server here is amazing!!! Definitely worth going if you are ever ib the downtown Asheville area.

We went for their brunch grand re-opening since covid. Got mimosas, bloody mary, egg Benedict, steak, crepe, and the chilaquiles. Everything was fantastic, especially their take on the chilaquiles. The tortilla strips had a hint of chocolate and remained crunchy. Eggs were on point! Duck confit/pieces gave it a nice change of pace, and the mole style salsa topped with cotija cheese to seal the deal and bring the dish together. I would highly recommend trying out any of the above-mentioned dishes. However, their entire menu looked incredible!Service was fantastic, and when the staff are genuinely happy to see you arrive, just gives a different vibe to the experience!

Beyond an incredible liquor selection, including options distilled locally from Asheville, the drinks and food menu - including their zero-proof cocktails- has something for everyone. The standout on the food side is the sweet potato gnocchi.Get a seat at the bar and take your time. It'll be worth it here.

Great downtown spot. I highly recommend. Do yourself a favor and definitely get the fries. Cocktails were tasty. For service we had Saffron and she was awesome. Will definitely be back.

Cool dark spot downtown. We were able to sneak into 2 stools at the bar and try a couple drinks from the menu and then asked for some drinks not on the menu. The things in the menu were done well and looked great. The things we ordered off menu weren’t quite executed at a super high level but mostly enjoyable. Didn’t really see any unique or hard to find liquors on the half of the bar we could see, I think they could improve in that area. I recommend sticking to the menu for drinks here - syrups and bitters are there for what they can make on menu which is fair.

This is the most creative and adventurous cocktail bar in this whole region! The drinks are incredibly unique and the bartenders put so much work and attention to detail in them. It’s amazing to sit at the bar and watch them work. They have a great cocktail menu, and the bartenders are also very willing to go off menu and create something unique just to your liking.Also, beef tartar! I know it’s not for everyone, but if you’re adventurous enough, you can’t go wrong with a pile of finely diced, perfectly seasoned raw beef! It’s not a dish I’d trust just anyone with, but this place does things right.
