I visited Copa Latin Bistro with the hope of supporting a struggling business, but my experience left much to be desired. The food lacked flavor, falling short of expectations for a Latin bistro. The dishes seemed to miss the vibrant and bold tastes typically associated with this cuisine. Additionally, the service was mediocre, which further detracted from the overall dining experience. On top of that, the prices felt a bit too high for the quality and portion sizes provided. While I appreciate the effort to run a small business, there are significant areas for improvement.

It has taken me 2 weeks to write this review because I needed to sit with the entire experience.I rented the downstairs to celebrate our daughter's college graduation. She decided at the last minute to have dinner and I was thrilled that the space was available.Positives: private location for an event, decent meal options and they allowed for customization, housemade corn tortillas, all fees included based on your selections, cozy decorAreas for improvement:Booking - all bookings are handled by Elizabeth, the owner, so the front desk isn't aware of the private room's availability. Sharing that information with the team is a small step to improve customer relations.Restaurant operations - we had a 6 pm start time and arrived approx 5:35 pm (not expecting to be seated), but we were ushered downstairs. Knowing of an upcoming party, the only thing prepped was the buffet table signs of what food was going where with the chaffing dishes. To shorten the length of this review, I will enumerate other concerns.1. Silverware was not put on the tables until approx 6:10 pm2. Food was not served until approximately 6:45 pm (when asked later, Elizabeth shared that guests usually use that time to drink and socialize; however, I clearly shared that is anyone was drinking that was separate and they would have to go to the bar. Nor, was I told to expect a delay. This could've been resolved with additional inquiries during booking, so the restaurant was prepared. We had family traveling home the same night and had been sitting since approx 12:30 for the graduation ceremony.)3. We had the taco bar with chicken, pork, and shrimp. The shrimp was scant and with several pescatarians in our party, it was gone on the first pass. Despite numerous inquiries, it wasn't refilled until all of our guests had left at approximately 7:35 pm. Again, operationally, a question about group food preferences during intake would've allowed for better prep. Also, after the first two tortilla refills, we never saw more.4. I had to ask 4-5 times for dessert. Finally, it was provided. Again, operationally, the flan and almond cake should've been ready to go before we even arrived. That is an easy item to have prepped.5. We were constantly told how busy the upstairs was as if we weren't paying customers. From the website, it states "For all buffets, we prepare food in small batches and replenish throughout the event to maintain the highest quality." Yet, that was not our experience.If booking a private party, ask lots of questions and make your expectations clear before booking.As a small business owner, I'm a fan, and there is a need to tighten operations.

Absolutely fantastic soup to nuts. Awesome decor and design - beautiful space - and every segment of the meal was fantastic. Had the great pleasure to meet the owners - husband and wife Elizabeth and Roberto - as well. They couldn't have been nicer. This is the exact type of place you want to support and frequent in town. Tapas and Tacos for Cinco de Mayo. And dear Lord the desserts. Just awesome.

Copa never disappoints. We came and decided to share a bunch of appetizers and spilt a main course. If you haven't tried the Cracklin' Bread Budder Board--add it to your next visit. The Duck tacos were delicious. The mojito was the best one that I have ever had. The service was friendly--like going to a neighborhood restaurant. We will be back.
