I've grown up with the best of all barbecue styles the Carolinas are known for. Kyle Fletcher's is more enjoyable because it incorporates the best traditions of Eastern NC pit cooking where the wood smoke has heavily perfumed the meat. Since they use pork shoulders only and still have the classic bark cut into it, the pork shoulders in my opinion make the best cut because of the marble and moisture content.
