Now known as Hillsborough Baking Company, easily the best homemade pasta always freshly prepared and presented with farm fresh vegetables, zippy sauces and layers of flavorful textures...mmm good.

Enjoyed dinner here during a quick stopover in Hillsborough. I think I love every single thing about this place. From “welcome in” with a heartfelt smile to walking out with full bellies, it was perfect. Hubs had the Canestri. I enjoyed the spaghetti with 8 oz meatball. The rich flavors with super fresh and deceptively simple descriptions remind me of living in Italy. I also love the vibe of seeing the staff say hello, shake hands with new guests, and dance to the great background music.
I really wanted to eat here after reading another review that complained about the 20% cost of living charge. The owner wrote an impactful and earnest response that just made us want to give our business to someone who clearly authentically cares about their team. This is a special place, an independent restaurant doing authentic and delicious cuisine. It feels good to spend our hard earned money and know it’s going to a place like this. And in my personal opinion, the only people who would complain about this are 1)people who have never worked in a service industry and 2) people who routinely stiff their waitstaff without regard for the impact that has on that person’s life. So, again in my humble opinion, which is in no way tied to the owners/staff here, people who feel that way can go right ahead and make a reservation at Olive Garden.

Love, love, love this place! The menu changes seasonally, and the food is always to die for! The service is always on point with a smile. Even when I've stopped in for some pastries, I have been delighted. A must! when in Hillsborough.

The atmosphere is good, the food is average, and the service is nonexistent.I thought the braised pork butt sandwich was a little overpriced at $17 dollars, but when you add on the mandatory 20% tip, the price became severely inflated. Hoping to get a little side with your $22 sandwich? Well, keep hoping because all you get is the sandwich. Here's the kicker, I fancy myself a good tipper, I worked in the service industry, but this place expects you to get your own water, napkins, silverware, and then to bus your own table when finished. Where's the service that warrants a 20% tip?? The entitlement of this page is absurd!!

The food is very good, but the service policy is an outrage. There is an automatic 20% charge added to each order so that everyone gets a living wage. For this charge, you stand in line while your order is being filled, take your food to the table, and buss your used dishes to a collection point. Perhaps the owners should consider paying a living wage and leave tipping to the customers.
I've been here several times to meet friends for a morning visit. I always get a nice pastry. You never know exactly what they'll have, but they are good and fresh. And the coffee is the best I've found in Hillsborough!

Food was ok. But this forced tip is soooo d**** I had to get my own water. My own silverware. And bus my own table. All for me to pay a 20% tip. Not coming back. Your employer should pay you more. Not force me to pay for something I don’t get.
Panciuto has changed form over the years, but it is still serves some of the best food in the Triangle. The menu changes weekly to incorporate food that comes into season. Can't recommend it enough.

Canestri+ cacio e Pepe was a delicious lunch. This is a bus your own table place, and tips are included to pay their workers. So nice not to do math every bill. Only a few tables but full bar, canned beer and even coffee if you’re so inclined.

The food is always great, good wine and cocktails. Seasonal menu that changes weekly. They've extended their hours again which is great. Delicious pastries.Can get busy but never waited more than 15 mins for a table to open up. You pay at the cashier so service is somewhat limited and it's fairly pricey but tip is included and food is so great.Yet to be disappointed.

This review just regards the pastries and desserts, which are dramatically over spiced. The chef needs to appreciate that less is more and adjust for a better balance of flavors. Tried two desserts and both had probably 3-4x the amount of spices that would have made them balanced and good.
Best gnocchi I have ever had. Soft and pillowy, just enough butter and lemon cal fresh veg was stellar, especially the beets.
Great food!
Vegetarian options: There was one vegetarian option on the menu. It's the first time I've eaten there since they changed into a coffee shop. While I didn't ask, I got the feeling that if you asked for something off menu they probably do it for you.
