Just tried Happy Dayz ice cream in Edison - really good!
Great selection of flavors - traditional American, sorbet, and some Indian flavors as well (and two sugar free!) Friendly service and fun atmosphere! Open late, even on a Wednesday. (Not to mention cheaper than Carvel)
I recommend - go give it a try!
