I received the spinach ravioli as a hostess gift, and made them tonight with a drizzle of really good olive oil and a sprinkling of pecorino Romano and thought I died and went to heaven. Thin and tender pasta that held up to the boil and spectacularly light and flavorful filling. I’ll definitely purchase these, as well as work my way through the other products. I just made your Short Rib Raviolis and unfortunately I was not impressed. I wish they tasted as good as the box that came it. The filling taste like minced meatloaf mix and not beef short a ribs. Short rib meat should be dark brown and have a string like consistency.The ravioli themselves are to small and the corners of the pasta are too hard after cooking for almost 15 minutes. I have enjoyed home made Short Rib Raviolis and these are not close. Sorry but this was disappointing.
