Delicious food that you can't tell is vegan

I try and get to em when I can, the only downside of a food truck. They have sole gf options and I appreciate this and every time I've been they are making things their own from scratch and not relying on expensive super processed pre made foods.

These people know how to make vegan food. We're Texans… we know barbecue and their brisket was 100%, taste, texture, appearance, amazing barbecue. We had the nachos and even the cheese sauce was spot on. They DO have dairy options, so watch out for that.

I have had Root 66 quite a few different times but I feel like I always go back specifically for the nachos. I love nachos especially loaded nachos but the large amounts of dairy can sometimes hurt my stomach so I love the vegan nachos are an alternative way to get my fix without feeling any of the side effects that dairy has on my stomach. You can find them at the ABQ collective or occasionally around town for special events. Sorry to hear that they recently had a break in and have had to stop keeping their truck at the ABQ collective outside of when they're actually doing the events. They are a little bit more on the expensive side but vegan ingredients especially quality ones are definitely more expensive. They make a lot of their stuff from scratch, and the portions are very sizable in my opinion.

Got the elite sample platter and the vegan brisket nachos. Both were delicious, but next time I'm going to remember to ask for no/less jalapeños (a bit much for the 4 year old with me). For the meat-eaters out there, I thought this was a good imitation of brisket based on texture and taste (strands were shorter than "real" brisket, but seasonings were excellent).Atmosphere was wonderful with lots of outdoor seating on one of the first warm days this spring.

Thank you Root 66 food truck and Destiny for an awesome elite event. The truck is a bit hidden, but there are signs on Eubank to point the way. I've tried various vegan places before that have the various vegan meats, but I have to say the Root 66 truck really did an amazing job at making things very flavorful. I was really amazed at the vegan queso on the nachos. For those that are gluten free out there, it seems that the shrimp tacos may also be GF.The nachos and the taco had just the right amount of heat so that it was flavorful but I could still taste the food and my face wasn't on fire! If you haven't had a chance to try this truck, even if you're not vegan or vegetarian you should give it a try. It's really unique and absolutely delicious. The vegans and vegetarians out there should definitely come out and support it because there just aren't as many options out there as there should be!!

I'll start by saying that I am a carnivore but every once in a while I try healthier options. I gotta say that this food truck and the folk working here really impressed me. The concept of the cuisine here is rally good and unique. As I devoured my brisket nachos I couldn't help but wonder how the heck the brisket was vegan. The appearance and texture was the same and taste-wise would not have known the difference if it wasn't that I knew beforehand. I have to also give props to the brisket taco. With the generous amount of guac and the right amount of cilantro and cebolla it held its own. Root 66 has something very special going on here...

Love this food truck! Who knew someone could make vegan Mexican food taste so good like Root 66 did!I had a chance to try the Yelp combo (meat nachoes + brisket taco) and ordered an extra soda + shrimp taco (all vegan in actuality of course!) and had to say...I actually loved eating them than the traditional Mexican fare that I was expecting! They were not greasy + oily or made you feel bloated like how you'd feel for typical Mexican food at all!What I like above all is..this is a small, family business! The guy runs the truck with his family! How awesome! He was so nice and kept his cool and hospitality as the line was forming as well. He even let me order even when I first got there before his official opening hours as well. So nice!Overall, I'm so glad I got to try the foot from Root 66 and it was my first time checking out ABQ Collective. I definitely plan to stop by for some food at Root 66 again for sure given how much I loved the food there (I even went back and followed them on fb just so I get see some future updates from them!). Thanks Destiny from Yelp and Root 66 for a wonderful meal (and a Yelp gadget) and a chance to try this wonderful local vendor that I would never have discovered on my own at all.

Root 66 is a great choice for Mexican-inspired vegan fare. I had a taco and small nachos, both of which featured their version of brisket. Both were very good - flavorful, with some heat going in the taco - though I preferred the nachos. I liked the queso - it didn't taste cheesy but it was delicious.If you've seen Root 66's truck around town, they are now located at ABQ Collective on Eubank and Constitution, behind the building on the west side. There are several fun shops you can visit while waiting for your food - clothing, jewelry, chocolate, and a barber and hair salon, to name a few.

Who knew vegan food could be so delicious! I sure didn't! I mean I've had the soy burgers, but this food truck took me to a different level of food. I got here later than I wanted to and the guy said he ran out of food...but, he hooked me up with a delicious sample. Shrimp tacos, and beef brisket, with coleslaw. Great hospitality and a nice little spot to have a sit down food truck experience. They will be there for vegan earth day celebration with music and food on 4/22/23. Go check it out, you'll enjoy

Great food, fun atmosphere and lovely event! The weather was beautiful but I wish there was more shade in the outside dining area near the food truck. Perhaps some umbrellas would be a good addition? The food was wonderful but I was most excited about the Mexican sodas they offer. My sangria soda paired well with my nachos and taco. Also, I loved the cute Yelp paper under the food and fun reusable Yelp utensil swag item. I can see this food truck being a hit this summer.

Wow! This was an excellent meal. I had the vegan brisket nachos and vegan brisket taco. The brisket really had a shredded meat like texture and taste. Even my carnivorous husband told me "there's no way this is vegan." I asked what the brisket was made of, and I was told it's a combo of wheat and soy. The cheese sauce was also really comparable to real cheese. It came smothered with the cheese, as well as shredded lettuce, jalapeños, and a crema. I also had the taco which was small but really good. I do wish it came with a sauce or salsa. Overall, we were really impressed and would absolutely recommend this food truck to both vegans and not!
