Stopped by this restaurant today for some lunch and we were not disappointed! Our waiter was awesome, the ribs literally fell off the bone, the homemade pinto beans were amazing, and the rolls with honey were delish! So glad we stopped here, definitely check it out if you are in the area! ❤️

We are visiting from Texas. The food was awesome, just as good as Texas BBQ! 😁. If you stop here, make sure you get the nachos and try the ribs. My wife liked the giant potato filled with pulled pork, cheese, mushrooms. Our waitress, Bree, was super friendly and kept checking on us and keeping our drinks full. It was a good experience thanks to her.

Great BBQ place! I was visiting Carlsbad and found this listed by our AirBnB host. This also happened to be right across from our house. Their portions are pretty good and taste is great. I gave 4 stars because I found the brisket crust a bit harder than I would like.

Saturday night, wanting to try some Carlsbad BBQ! Right?.. well hold on, this place isn't what I expected since I always see a flood of cars out front.
To start- it was approximately 10-15 minutes after being seated to obtain a menu, wait staff doesn't seem to be very attentive unless it's a party of 4 or more.
Upon ordering, the delivery time from order placed to food on table was very reasonable, I ordered the "Hog heaven".. brisket, turkey and sausage with mac and fries as a side.. serving size was fair for the price, food however, all of the meat items arrived.. cold.
Mac & cheese Luke warm.. fries, same.
Brisket, chewy & dry. . would've had a better flavor profile with heat I'm sure.
Sausage was pretty good despite the temp..
Ham, very.. very dry. The savior of the entire dish? The BBQ sauce. Also note; this plate is served as is with rolls only.. no pickles or onion as tradition.
Again, wait staff.. sparse.
I wouldn't envision a 2nd visit, very subpar and honestly a pure disgrace to the plate in which it was presented on.
I assume this is the standard for the area thus the reviews of people who haven't experienced better.

We were driving thru Carlsbad back home to Roswell area. We gave this place a try.. let me tell you all something...its absolutely amazing!! An all around wonderful place :)

Had to do a catering order was quoted a price of $1900ish the lady on the phone charge my card an extra $69 for a credit card processing fee which I completely understand but she neglected to tell me. Call back three times and was put on hold each time for 15 minutes And when I finally got a hold of the manager and told him that I just wanted to refund, he agreed to the refund and hung up in my face. I called back and he claimed that I cussed out his staff and was unreasonable so why would he continue to talk to me Completely unprofessional? Highly recommend that you use any other barbecue joint. I hear Badbass BBQ barbecue does a better job, I’ll give them a call.

Update: As an answer to your reply what I meant was that your BBQ sign should be taken down. I believe if you are advertising as being a BBQ restaurant you should have great BBQ plain and simple. As for your assumption of my possibly reading old reviews from years ago you should recheck your reviews. There is one as early as 4 months ago and another 8 months ago. You told both people you would fix the problem. Apparently you didn't. I personally would not try your other BBQ menu items because if you can't make great brisket, which is thee signature meat of any BBQ joint, and you advertise as being a BBQ joint and having great brisket what's the point. I would be taking a chance at waisting more money and being disappointed again. Your first point of quality control is your chief. If he or she thought that brisket was of high enough quality to serve, when there wasn't a trace of juice on the plate, why would I believe they would be any better at detecting any other substandard meat preparation. That is also the reason we didn't say anything. How could they fix it? They already fixed it once. We weren't looking for a free or discounted meal. Just a good one. Feel free to read my other reviews. I am not a complainer. If my experience is good I say so. If it's bad I also say so. I have probably had more good experiences. Just not at your establishment.

For a place that advertises as being a BBQ joint all I can say is WHOLLY DISAPPOINTMENT!!!!! My wife and I got there a little after 7pm. We had been on the road for 10 hours and wanted somthing to eat before going to our lodging. We came across the Red Chimney and gave it a try. The prices seemed a little higher but we feel great BBQ is worth it. We had also planned on returning the next night to try some of the other BBQ on the menu. We, as other people said in their reviews, wanted to try the brisket. As other people also said it was beyond dry, it seemed microwaved, and I also have had better beef jerky. We were thankful we were provided a large glass of water, which really helped. When we first got there it took a while to get service. We ordered our food which surprisingly took around a half hour to get. Everyone else there had already been served. No idea why it took so long. The server didn't come by until we ate the things we could and asked for the check. We didn't mention anything to our server because by this time at least an hour has passed and we wanted to be on our way. I read the reviews after our experience and was disappointed to see that others had the same experience and were told things would be improved. Well they weren't. I also BBQ and smoke meats at home and have not tried brisket. If I did and it turned out like this, I would definitely not serve it let alone charge money for it. I wouldn't recommend any of the BBQ items on the menu simply because if you advertise you are a BBQ joint and you don't have great brisket, you should take your sign down.

Brisket sandwich included tons of onions and pickles! Kind of bland brisket and sauce. Nice place, very friendly and quick but I wouldn't recommend it for the brisket. Two brisket sandwiches and two fries - $34.50.

The atmosphere at Red Chimney BBQ is fantastic! The decor really sets it apart, with lots of animal mounts like deer, elk, bear, and buffalo adding a rustic charm. There are also collectible plates, dishes, and unique older-era knick-knacks that make it feel cozy and interesting.
The food was great overall. The pecan chicken was fall-off-the-bone juicy and absolutely delicious, and the chopped BBQ had a nice hint of sweetness. We ended up with a double order of mac and cheese because it was so cheesy and satisfying. The dinner rolls were also a standout—stuffed with chopped BBQ, they were a real treat. The only downside was the beans, which were pretty average; a little pork fat might’ve elevated their flavor.
The wait staff was attentive but felt more transactional than friendly, which was a slight downside to an otherwise great experience.
We’ll likely be back next time we’re in town to enjoy more of the delicious food and unique atmosphere!

I highly recommend the brisket in any form, either a sandwich or the plate. It is awesome. The restaurant has a lot of history on the wall. Staff is extremely courteous and kept on top of our refills and even asked us for desert. A must go if your in the Carlsbad NM area. We drove from El Paso, Tx just to come and eat here
