Colleen and I travel the country having barbecue in every town we can. In Carlsbad, New Mexico, we chose Red Chimney Barbecue. It was founded in 1954 and still going strong with the third generation of family, so they must be doing something right. We are eating low-carb so we started with the chef salad which was flavorful. The only critique I have for the entire dinner was That the chef salad was made with iceberg lettuce, which is so yesterday, when Romain lettuce is so much...
Out of town visitors. I didn't care for it, but I am very picky about BBQ. I had the pulled pork sandwich and just wasn't impressed. I wouldn't go again. Oh, the tables were nasty sticky, too. That kind that just doesn't come off. That was a definite turn off, too.
