Great northern New Mexico restaurant. The location in Los alamos has some long term staff - and these folks are just wonderful. My favorite - huevos rancheros con chorizo. Good as it gets.
El Parasol is not a fancy place, but it is DELICIOUS! The tamales are wonderful, the shredded beef tacos are incredible. The green chile stew is fantastic, try a breakfast burrito, delicious and Christmas is the best way to order your chile! Arroz con pollo with a Mexican coke is a great way to go! I could go on! Get the green salsa, guac, and chips, you won't be disappointed! It is the best!
Their food is always good, but Monday specials are my favorite. They have good green chile stew, carne adovada, and burgers. For catering the enchiladas are delicious! Breakfast burritos are great and don't send you to the bathroom, but there's no hash browns in these.
