This is one of our favourite things from their menu.Their hours of operation are not always compatible with when we are passing through the area; however I have always left here very glad to have made the time to exit I-25 and drive in to Pecos to get a meal.This is not fast food; on the contrary they are a small business which takes their time. They seem to operate (during the late-lunch timeframe at-least) with a minimal staff. If you want or need to be served in a colloquial New-York-City-minute; you will be quite disappointed with their speed. Pecos is not NYC in countless glorious ways. However if you can wait a bit you will get NM cuisine which is good, authentic, unpretentious at a price point which is acceptable.“
