We got the six bison empanadas for $20. This was a nice lunch for my girlfriend and I (three each). The lady making the empanadas was extremely nice and told us they sold out regularly. Empanadas were delicious and great value, were fresh made.

I wondered how this place got a solid five star review and maintained that over the course of almost two years. The answer was obvious when I walked up and started engaging with the owner Galla. She welcomed me with a warm beautiful smile, and shared some stories that reflected her genuine love and passion for healthy sustainable food and environment. Food is flavorful and tasty. It’s a tiny truck but what she cooks and offers in that truck is huge! ❤️

I wish I could give more than 5 stars! We were passing through on a 10 hour road trip and the bison empanadas and a smoothie really hit the spot! Truly incredibly food, excellent! The owner was very nice as well. Great food, nice value, and lovely service. Don’t miss out on Che Santa Fe!!

Che Santa Fe is a true food truck gem. I recently tried the beef and bison empanadas and was incredibly impressed. The use of organic ingredients is much appreciated, and you can really taste the difference. The chimichurri sauce is very unique and adds a delightful tangy kick!The owner is incredibly friendly and takes a clear pride in the food she makes. You can tell the empanadas are made with love! The price was fair considering the quality of the ingredients and the deliciousness of the final product. I will definitely be a regular customer - can't wait to try the Choripan next time!
The empanadas and choripans are extremely authentic and high quality. Everything is made fresh on the spot with ingredients from Beck & Bulow. The owner is an absolute delight and clearly takes great pride in her work given how friendly her service is. There is no food truck experience quite like this anywhere I’ve been, let alone Santa Fe. A must visit. I will certainly be coming back regularly!
