Che Santa Fe is a true food truck gem. I recently tried the beef and bison empanadas and was incredibly impressed. The use of organic ingredients is much appreciated, and you can really taste the difference. The chimichurri sauce is very unique and adds a delightful tangy kick!The owner is incredibly friendly and takes a clear pride in the food she makes. You can tell the empanadas are made with love! The empanadas and choripans are extremely authentic and high quality. Everything is made fresh on the spot with ingredients from Beck & Bulow. The owner is an absolute delight and clearly takes great pride in her work given how friendly her service is. There is no food truck experience quite like this anywhere I’ve been, let alone Santa Fe. A must visit. I will certainly be coming back regularly!
