I'm gluten intolerant. I waved a server down at the entrance to ask about their options and she was very friendly and helpful. She said there was some gluten in the sauce (from soy sauce) and asked if that would be okay for me. (It is occasionally). BLUF: best ramen I've had since moving from San Francisco to Illinois.
I got tonkotsu, mild (i.e. not spicy), wavy noodles, +menma. Smooth, well-balanced broth, chewy noodles, and almost all the chashu was so tender it wanted to fall apart when picking it up.
We also got the wasabi tako which was surprisingly strong in the wasabi but was still really yummy. We also got the tantanmen; I'm no judge of tantanmen but I thought it tasted...

Wish I grabbed a photo. I’ve eaten Ramen all around the world. I’d say outside of California and New York (Oni in Dallas), the ramen in North America isn’t great.
The extra spicy tantanmen here was nearly perfect. I think the noodles lacked that almost buttery taste you find in exceptional bowls in Japan but that’s me being very nitpicky. Hallelujah for their eggs!
