I recently had the pleasure of dining at ITO Las Vegas at the Fontainebleau, and it was an absolutely phenomenal experience from start to finish--hands down a 5-star gem! The menu was a masterful showcase of flavors, and every dish we tried left us in awe. The Fuji salmon was melt-in-your-mouth perfection, with a freshness that was simply unmatched. The Yellowfin tuna was equally impressive, bursting with rich, clean taste that highlighted its top-tier quality.
The Uni caviar was a luxurious treat--creamy, briny, and unforgettable--while the Otoro took indulgence to another level with its buttery texture and deep, savory notes. The Spanish mackerel brought a delightful balance of boldness and finesse, and the scallops were cooked to perfection, tender and succulent with every bite. But the real standout for me was the Golden Eye snapper--it was an absolute revelation, with its delicate yet flavorful profile that lingered long after the last bite.
The ambiance was sleek and sophisticated, the service impeccable, and the attention to detail in every dish was truly world-class. ITO Las Vegas is a must-visit for anyone who appreciates exceptional sushi and an unforgettable dining experience. I can't wait to return!

I was excited to try this place, given the reviews. However, the tekka bowl I ordered had very not fresh tuna and was unsafe to eat. The tuna was grey and rotting. You can see from other reviews that tuna should be bright red. They were nice about it and gave me a refund, but they still served me something that would have definitely made me ill. I also had ordered other items, and they only gave me a refund on the specific item in question, which I don’t feel fully remedied the situation. Picture attached. Sad. 😿

I went here 4 days in a row on my most recent trip to Vegas. The quality of the fish was so good and they were able to customize my bowl for free. They were quick and the rice itself was very flavorful. Healthy, relatively cheap, and one of the only good food options in Vegas.

Too good to be a food court quick bite. The fish and ingredients are fresh and flavorful. Rice has a bit of citrus flavor which has great harmony with the fish. The presentation was fabulous. These are small size rice bowls and bites and still, the price is reasonable considering its location

19 courses!! Each detail was amazing!! Tucked away through a private door. Only 12 diners, highest view in all of NV, so fresh, fish was buttery and sweet. Expensive, but what an experience for a special occasion! Spectacular!

Located conveniently in the food court, BAR ITO offers decent sushi but falls short in value for money. While the sushi is fresh and flavorful, the portions are quite small for the price, leaving you wanting more. On the positive side, the service is quick and the staff is friendly, which makes the experience pleasant despite the high cost. If you’re in a hurry and don’t mind paying a bit extra, it’s worth a try, but don’t expect a filling meal.
