Well Crafted High Quality Ingredients in a Lapidus on Steroids setting (I think he’d like it). I have to feel a little for the workers who are bombarded by the constant high decibel casino sound system. Songs and the sound system are good but it’s still overbearing old school casino (not subtle at all) manipulation.

Great Quality of food !! Food tasted good, I’m glad we came to eat here I love Japanese cuisine! All the dishes were disposable but really good quality ! I really recommend this place !

Inside the hotel food court. Above the casino, very well done flavors, moderate portions and corresponding prices. I liked it a lot. I recommend it. I ordered the wagyu bowl. 10/10 and a coke. 30 dollars
I came back the next day and ordered the salmon bowl for $12, which was very delicious but I liked the wagyu one better.

The healthiest option at the Fontainebleau; first class small sushi and vegan/mushroom rolls. Toro and Sake options are excellent.
Insanely inflated prices, slow service.

Excessive packaging, I get that it creates a vibe to match the price point but all I see is landfill and it makes me unable to enjoy the meal. I think its also there to keep the seaweed crunchy? but I think it would of stayed crunchy in the 2 mins between making and consumption. If I had been ordering delivery I would've have felt so disturbed. I mean, Im not an enviro fanatic or anything; but I think I represent the modern metropolitan. Feel like we can all do the bare minimum for plastic consumption and not triple package stuff.
Sushi was good for the price point, doesn't make me wanna go to the real ITO though. Melt in your mouth sushi isn't really authentic if everything has been minced. Service was good and I would go again in but hope this review makes them reconsider the packaging.

The rolls were delicious and eating them was an experience. From the packaging to the diner preparation and the taste, I’ll remember this place for a long time.

Even better that it it’s in a new food court with great ambiance. Enjoy!

This 12 seat experience at 67th floor is excellent authentic omakase sushi. We arrived early for private bar experience and then wisked upwards and escorted into the restaurant. Beautiful place. Wonderful food.

Wow, Bar Ito just raised the bar for food court sushi! It's fast but still gourmet and with the craftsmanship and care of an authentic high-end sushi restaurant. Service was friendly and attentive, even with prepping and plating the food. Everything in our meal was created perfectly - from the sushi rice with the right al dente bite and sticky vinegar, to the freshly seared marbled wagyu oozing with flavor topped with a dap of creamy egg yolk, to the fresh bluefin tuna paired with sliced green avocados and a scoop of melt in your mouth negi-toro, to the fresh wasabi and bamboo to-go containers and chopsticks. Everything was well-thought out and purposeful. For the quality of the meal, the price is a good deal!

This is a review for Ito Omakase on the 89th floor. Google map doesn’t have it located yet.
Gorgeous restaurant with spectacular views. Unfortunately the positives ends there….its $400 omakase and either a $200 or $400 sake paring. I did the $200.
You have 3 chefs, one Japanese, one Korean, and one “american” born Asian.
It seems like they want to be able to converse with the Vegas high-rollers more than focusing on the craft of sushi making.
These 3 chefs are very chatty and not always professional in the way they spoke.
The server I had was very friendly but again, just not refined like other top notched restaurants of this level.
Sushi sashimi and apps are all ok, nothing memorable. For these prices it’s not worth the visit.

I dont recommend.
While it tasted good, I was underwhelmed with the amount for the price. I'm a bit of a sushi snob, and was not impressed with the small amount they give you for the price. I have had some really great sushi for a lot less money. I will not be returning to this eating establishment. I will just go back to my favorite sushi restaurant, where I get more to eat, great quality, treated much better, for less money, and an actual restaurant environment. (The gal that rung me up was rude/condescending when I asked if my order was ready, because I had received a text, saying it was.) I would not recommend, nor will I return.
It is high priced fast food with rude staff. NOT IMPRESSED!

If your looking for a quick bite good roll. Wasabi isn't powder. The soy sauce was very good, wish I knew which one they used. The down side you have to roll your own roll to finish it. But it wasn't a problem. They had a good cold sake also.

It was a quick and nice lunch for me.
First of all the portion was small you guys! If you did not eat a lot one bowl should be enough but if you love heavy lunch like me you got to order 2! To fill you up.
I had a bowl of salmon+Ikura.I love it and it was fresh and perfectly balance and seasoning.My second bowl was wagyu! I love it! It becomes my favorite! And can’t wait to go back and get more!
Service was great! You ordered at the counter or you can scan QR code on the table and order online as well.
The vibe is pretty much like high end food court basically.
Will I go back? Absolutely!
