I recently had the pleasure of dining at ITO Las Vegas at the Fontainebleau, and it was an absolutely phenomenal experience from start to finish--hands down a 5-star gem! The menu was a masterful showcase of flavors, and every dish we tried left us in awe. The Fuji salmon was melt-in-your-mouth perfection, with a freshness that was simply unmatched. I went here 4 days in a row on my most recent trip to Vegas. The quality of the fish was so good and they were able to customize my bowl for free. They were quick and the rice itself was very flavorful. Healthy, relatively cheap, and one of the only good food options in Vegas.
