Carbone Aria was quite a disappointment. The service was friendly but they lacked in providing an experience worth the money. Our entire table didn’t really love the drinks. The options they had were tolerable in terms of cocktails but nothing special. The food, pacing of dinner, and atmosphere is where they dropped the ball. Carbone had been on my list for a long time and while the experience and service absolutely lived up to the hype, the food unfortunately left me wanting a bit more. From the moment we arrived the service was incredible, our waiter was enthusiastic, explained everything in detail and made us feel genuinely welcome. The ambience is classic Carbone: dark, lounge-style, dim lighting and very “Vegas” in the best way.

I went into Carbone with an open mind, but at the end of the day the prices do not justify the food you’re getting. The pasta is pretty basic and the carrot cake dessert was just okay. The bread they brought to the table was probably the best part. We also liked the carpaccio. The service was phenomenal.
