Make a reservation. Cool restaraunt, inside tables have a limited view of the fountain show. We unfortunately had two rude servers who made us feel uncomfortable and that we were disturbing others by taking photos. First server didn’t describe that we needed to order two courses then a second server pressured us to order more. The food host was nice and the spicy pasta was good but small portion.

We went to the new Carbone Riviera for our friend’s 40th birthday and had a great experience. The restaurant is large (it’s Vegas, duh) and super vibe-y with great service and great food. We sat outside with a view of the fountains which was such a treat!
For dinner we ordered some old classics and some new favorites. The spicy rigatoni was familiar and delish and the new lobster fettuccine was a hit with our group.
A great new addition to the strip!

Exceptional from start to finish—impeccable service, flawless atmosphere, and dishes that are both classic and elevated. Every detail felt effortlessly luxurious. A true dining experience. Special shout out to Joseph for his sense of humor and the excellent hospitality!

The food, interior design and decor were excellent. However, the service and food delivery timing was not coordinated. My reservation was for 8:30 and they didn’t seat us until after 9:00. The kitchen was slow and dinner took over 2 hours. The steaks arrived and the potato arrived 15 minutes later.
These are likely start-up issues that can be worked out. I would wait and until summer 2026 to dine again that should give them enough time to sort things out.

When in Vegas sometimes you never know who you’re gonna show up with at dinner we happen to show up with one extra for our reservation seven instead of six it took them about 15 minutes, but we were accommodated.so right off the bat it started off great. we ended up on the patio. It was a little chilly outside. I was in a short sleeve shirt and a little nervous, but the heaters were spot on. What a great dinner we were able to enjoy. Everything was perfect from the first water show to the last.. the service was fantastic and the food was incredible and our waiter helped us order the perfect amount’s. usually don’t get excited about new restaurants in Vegas, but this one blew my mind. It’s gonna be very hard for my friend who went here for his first dinner in Vegas to ever top.thanks

Amazing food, beautiful atmosphere, questionable service. Visited in November with my family. We made reservations weeks in advance, the restaurant had only been open for a couple weeks when we visited. We started with some drinks, calamari, and Caesar salad which was fantastic. The croutons were some of the best I’ve had. We got a couple pastas and entrees to share. Pasta portions were very small. Our server was making us very uncomfortable throughout our whole experience. He was making snide comments the whole time about what we were ordering. And treating us like we shouldn’t have been there. I would not return.

This place was amazing very well worth the wait to get a reservation. The service is A1 and food portions are large to be an upscale restaurant. Definitely recommend this place if you can get a reservation. Oh and the views on the patio A++++

This review is for Regina. I dined at the bar solo on Monday. Her recommendations were genuine and her energy throughout my experience was consistent.
It seemed to me that Regina had been working at Carbone Riviera since they opened, strong sense of ownership! I look forward to my next visit!

The Mediterranean-inspired decor is elegant yet welcoming! You can’t skip the tableside Caesar salad, spicy lobster meatballs, or the iconic rigatoni! Snag a patio table for that iconic fountain view if you can for a glamorous Vegas dining experience!
Carbone Las Vegas absolutely lives up to the hype. From the moment you walk in, the atmosphere feels classic, glamorous, and distinctly old-school in the best way. Service was attentive and polished throughout the night.
The caviar service was outstanding and easily one of the highlights of the meal; beautifully presented and indulgent without feeling overdone. Every dish we tried was rich, well-executed, and full of flavor.
The only small critique is the portion size of the Spicy Rigatoni Vodka. We ordered what was described as a double portion for a table of five, and it ended up being surprisingly small, barely six noodles per person. While the pasta itself was delicious, the portion felt mismatched to both the table size and the expectation set by “double portion.”
That said, everything else about the experience was exceptional. A truly memorable dinner, and I would absolutely return.

When Carbone Riviera ( @carboneriviera ) at the Belagio was announced I stalked reservations like a bald eagle. I couldn’t score a trip on the million dollar yacht yet, but I landed a feast for my Capricorn birthday‼️Every aspect of this was perfectly curated, tasted out of this world, & truly captured the final moments of the year of the snake shedding what doesn’t serve. The raspberry sativa gummies from WYLD launched 2026 into outer space that night, literally 🤣 The Ricotta Gnocchi con Caviar and their famous 2lb Lobster Fettuccine were death row quality, a few of the best tasting pasta combinations I’ve ever had. Getting into either version of Carbone can be beyond difficult, but if you’re looking for a feast get there right when they open and you just may be lucky enough to land a seat at the bar. I’ve waited over two hours for the legendary Hot Doug’s in Chicago, this was about timing. No Regrets. Let’s have an amazing 2026 and see just how far this year of the horse can go‼️
