World-class and exceptionally great pizza AND DESSERTS, AND APPS, in a very humble setting, great staff who are clearly proud of their work. Had fried zucchini blossoms; beautifully crisp perfect coating and full of delicious cheese; incredible pizza crust, really really good Italian sausage and insanely good funghi, lovely simple San Marzano tomato sauce. We finally visited Signora Pizza Lab, the first brick and mortar home of the Signora Pizza truck on North Rainbow Boulevard, and it absolutely lived up to the excitement. Chef Floriana Pastore, an eight time World Pizza Champion and one of Las Vegas’s most respected pizzaiolas, has created a small but mighty neighborhood pizzeria that feels personal, welcoming, and deeply rooted in Neapolitan tradition.

Signora Pizza delivers world‑class pizza and desserts in a very humble setting. Staff are proud of their work and treat guests with genuine hospitality. The menu highlights fried zucchini blossoms, beautifully crisp with a perfect coating and full of delicious cheese, and a pizza crust that is truly amazing. Italian sausage and funghi are included, and the sauce uses simple San Marzano tomato, never left alone. The Sicilian sodas, especially the pomegranate, taste fresh, and the Tiramisu has a nice boozy hint at the bottom. Cannoli are filled to order, crunchy and fresh‑tasting. Many diners say it is the best pizza restaurant experience of their life.
The brick‑and‑mortar location on North Rainbow Boulevard feels like a small, intimate lab. A wood‑fired brick oven warms the space and shows the care behind each pie. The open work area lets guests see the technique. Service is charming and authentic, making the experience feel like a little piece of Italy. The wallet pizza, or pizza a portafoglio, is folded and eaten like an edible wallet, full of flavor and simple. The place is small but has enormous heart and serious pizza credentials.
The menu is very vegan friendly; meat can be removed from any Red Pizza and replaced with vegan cheese, which is tasty and not overpowering. Fried pizza is fantastic and not super oily. The Margherita is Roman style, with a golden lace bake, puffy rim, stretchy cheese, fresh tasting tomatoes, and basil leaf. Prices are a bit high but worth it, and the owner is a real champion. The atmosphere is streamlined, industrial in white and black, with a trellised outdoor patio and art rock music. Overall, Signora Pizza is a wonderful addition to the Las Vegas pizza scene.
