Tonkotsu ramen is a ramen dish that originated in Fukuoka Prefecture on the Kyushu island of Japan. The soup broth for Tonkotsu Ramen is based upon pork bones and other ingredients. The soup broth is prepared by boiling pork bones in water for a significant amount of time, up to 18 hours and the broth is typically cloudy in appearance. Fantastic sushi spot right in the heart of Downtown Albany, the food was incredible, and the service was exceptional. I ordered both sushi and sashimi, and my wife ordered Ramen, everything was fresh and delicious! We will definitely be going back!
