Tonkotsu ramen is a ramen dish that originated in Fukuoka Prefecture on the Kyushu island of Japan. The soup broth for Tonkotsu Ramen is based upon pork bones and other ingredients. The soup broth is prepared by boiling pork bones in water for a significant amount of time, up to 18 hours and the broth is typically cloudy in appearance. For serviced, cooked ramen noodles and sliced of Chashu (pork belly) are added, and additional ingredients include boiled egg, bamboo shoots, fish cakes and scallions.

Okay so I didn’t go to the restaurant but I ordered the appetizer sampler and ramen online. It came in a cute package 🥰 and the food was great! I absolutely loved the sampler idea and the sauces were amazing. I haven’t dug into the ramen yet because I’m already full but I’m sure it is yummy. I will definitely have to try this place in person. Thank you!!

We tried Ruby City today for their all-you-can-eat sushi, and it completely exceeded our expectations. Unlike most AYCE places, Ruby City doesn't cut corners. Every sauce is made from scratch, and you can taste the difference in the quality of everything. The fish was fresh, the rolls were perfection, and the presentation was beautiful. Hibachi was included and just as impressive. It rivaled any Japanese steakhouse we’ve been to.

This place is amazing but very quiet. The boba drink recipes are owner originals and are incredibly delicious. We tried three different sushi rolls and loved them all. The decor is charming and cozy with a variety of seating. Highly recommended!
