I’m in and out of Texas and Tennessee five times a year. I’ve eaten at historic BBQ spots down south, some dating back to the 60s. I know a good brisket and pulled pork when I see it. I’ve attempted to have southern BBQ in NYC many times and it always falls short, sometimes criminally.
