Today I visited Fogo de Chão Brazilian Steakhouse for Thanksgiving dinner. While the ambiance was warm and inviting, and the food was excellent—especially the flavorful cuts of meat and the well-stocked salad bar—the service left something to be desired.

It was evident that the staff was overwhelmed by the large holiday crowd. Although they were doing their best, the delays in getting our table cleared and the long wait for certain cuts of meat made the...
