Excellent Italian dining in Hudson. Feels like a little gem plucked right out of Tuscany. Highly recommend!

We first heard about Via Cassia while visiting Tuscany, and knowing we lived just an hour and an half away from a restaurant that we heard about from across the Atlantic, we had to come visit. We couldn’t have had a better experience! When the owners heard how we found them, they both made sure to come meet us. They were so kind and welcoming and took very good care of us! The food was absolutely incredible, and we got to enjoy the same wine we had while visiting Tuscany. Truly a 10/10 experience and we will absolutely be coming back.

high expectations, just ordinary, had the rigatoni with pork ragu, had the kale salad a bit sweet. overall just average.

What a gem! My husband and I absolutely loved our first time Via Cassia.
Everything was incredible. We especially loved the Gran Selezione, Kale salad, and the Spaghetti Aglio e Olio e Peperoncino. Don’t skip these dishes!!
The gran selezione meat and cheese board had some great local cheeses and meats from small producers. Nothing was left on the plate when we were done.
The kale salad looks simple but it has truly the best salad dressing I’ve ever had. The owners chatted with throughout the meal, and mentioned they used to lived in Southern California (and New York and Italy)… so they know salads.
The Spaghetti Aglio e Olio e Peperoncino was the surprise star of the night. While this dish may seem simple, the spice was incredible and the method of preparation gave it a cheesy vibe. SO GOOD
I also had a great glass of wine from their curated list.
Overall we loved the ambiance of the restaurant. It felt comfortable and intimate.

It was a perfectly cooked piece of monk fish- no easy feat. A slight crust while still so moist and tender. I'm leery of monk fish because many overcook and toughen it. Not here. We shared the butternut squash , pumpkin mozzarella salad. It was a welcome warm note. The only misstep was the Bucatini Amatriciana. While the sauce itself was very good the pasta had no bite. I could have sent it back, they all seem very professional and friendly, I simply didn't want to interrupt the flow. I had a glass of the Librandi, Critone- lovely. My daughter had a variation on an Old Fashion that was a little too anise forward for her taste-ask , and it can be lightened. But the berry lime Panna Cotta with a Northern lights extravaganza made for the finale of the season ! Great job!

As Italian Americans with dual citizenship, we travel to Italy often. Chef Gaetano prepares a menu of Italian food with homemade pasta that is the most authentic Italian food we have had in the Hudson Valley. He and his wife are wonderful hosts-enthusiastic and welcoming. Can't wait to go back....

The menu is thoughtfully crafted, blending classic Italian flavors with a modern twist. Every dish we tried was flavorful and well-prepared, showcasing fresh ingredients. The service was attentive without being intrusive, and the ambiance made it perfect for a relaxed evening out. Overall, it’s a place I’d highly recommend for both casual and special occasions. Also, they were so lovely to our dog, they made him feel like he was family!! I can’t say enough good things!!

Such a great addition to the Hudson dining scene. I loved my bucatini pasta dish. So simple yet deliciously flavorful. You can tell everything is made with high quality ingredients and great care. Check it out!

I have been coming up to Hudson for many years and must say that this was the best meal I have ever had. All the pasta dishes are homemade. I had the gnocchi with a mushroom miso sauce that was amazing. You must try this place.

Pasta was pretty good, not exceptional though…I expected more to be honest. The torta caprese was great for dessert. The restaurant is beautiful. Great ambience. Impeccable service. However, I found it a bit awkward that the restaurant was super quiet…only 4 tables dining. Yet we were sat right in between 2 of those 4 tables. Meaning, everyone could fully hear every word we were saying and there was no privacy…it was super uncomfortable. Especially for a date night with my husband. Not sure why tables were not sat apart when it was so empty. I probably wouldn’t come back unless I knew it was busy bc it was so quiet in the restaurant you could literally hear a pin drop. 🤣

My pasta order got mixed up so I had to wait for remake (hence the 4 stars)
Overall pasta was good, fairly light on the meat in the ragu sauce that was a notch disappointing too
Overall nice restaurant would recommend and come back to
