The tiramisu at Via Cassia in Hudson, NY is absolutely exceptional — hands down one of the best I’ve ever had. It’s perfectly balanced: rich and creamy mascarpone layered with delicate, espresso-soaked ladyfingers that melt in your mouth without being soggy. The dusting of cocoa on top adds just the right touch of bitterness to complement the sweetness. Every bite feels light yet indulgent, with that authentic Italian flavor that’s hard to find outside of Italy.

Loved the caccio e peppe pasta (I had the gluten free pasta with it, best GF pasta I've tasted) also had an amazing mascarpone cheesecake! So many other good food options too.

Honestly, I came in here without an appetite, and I had the BEST pasta I’ve ever had in my life! Gorgeous place. Owner has a cute dog. Can tell they are serious about customer service. I love this place, would come again 10000%.

The patio is beautiful place to sit. Not sure if they were understaffed but seemed a lot of people pull double duty and service felt a bit rushed in my interactions with staff, while the actual service took a bit longer than I'm used to. Not a problem though as I was forcing myself to slow down that night anyway. The food was DELICIOUS and well worth every penny. Goodness that pasta makes me sad I'm not local to eat there again. Seasonal cheesecake was a wonderful change of pace from tiramisu. My only regret was going with a red wine instead of white to really tie the experience together.

As a fellow chef, I know how tough this industry can be and how much heart and hard work it takes to run a kitchen. That’s why I don’t hand out reviews casually. Honestly, many places just lack overall quality — and I don’t complain, because I know the deal. But then you come across a place like this, and you have to tell everyone how impressive it is.

Via Cassia is one of those rare gems. Chef Gaetano and his team are creating food that’s thoughtful, authentic, and full of flavor. We enjoyed dishes like the Cavatelli Grano Arso with sausage and dandelion green ragù, the Bavette Cacio e Pepe with black pepper and pecorino, and the Black Tuscan Kale Salad with honey, black truffle vinaigrette, and ricotta salata. Every dish showed craft, balance, and care.

On top of that, the hospitality and warmth in the room matched the quality on the plate — you can feel the passion behind everything they do.

From one chef to another, much respect. If you’re anywhere near Hudson, NY, make sure to stop at Via Cassia. This place is truly something special.

What a charming place. We loved our dinner. The food was excellent. But the ambience was so lovely. It had the feel of a favorite place for regulars. And the young couple who own it -- he is the chef, she a professional photographer-- have injected their love of Tuscany and community into every square foot of this intimate dining room. You won't be disappointed!

This is hands down my favorite restaurant in Hudson. Guy and Meigan, chef /owners are friendly, incredibly gracious and know how to run a restaurant. The food is superb. Stephanie , the bartender makes the best drinks around with a smile. Put this place on your list! STAT.

The food here is absolutely amazing — every dish is bursting with flavor and beautifully presented. The atmosphere is warm and welcoming, making you feel right at home. But what truly makes this place special are the people behind it — the owner and the chef are absolute sweethearts, pouring their heart and soul into everything they do. You can taste the love in every bite. Highly recommend!
