My boyfriend and his family came here and did a tasting. I felt like it was a bit steeply priced for what it was. I understand this place is new so taking that into consideration. It would have been nice for a description of the notes of the sake to be written below the titles. The way the snacks were presented in the basket reminded me of being on an airplane (I'm sorry!). I think it would also be smart to have a couple of physical menus as there are many elderly in the area. The wine glasses also threw us off as we were expecting a more traditional sake experience. Lastly if they could offer both hot and cold sake think that would elevate things. The staff was nice and the sake was good so I would still recommend!

I went there the other day.It's bigger and more beautiful than I expected.I wanted to participate in the tour, but I couldn't make it in time, but it would be interesting to just taste the three types of sake.Personally, I think I would have been able to relax more if there were more options on the menu to drink and eat.

Wow. Dassai Blue makes me question whether I’ve ever had good quality sake before. We tried and loved all 3 sakes in their flight, served in sparkling clean glasses, though I must say the Type 23 alone will have us coming back to enjoy and purchase bottles. The establishment itself seems like a Hudson Valley enigma-huge, modestly decorated, thoughtfully planned down to the smallest details. We planned only for a short visit so we didn’t go on the tour, but I imagine that plus the museum-like installment of storytelling artwork may illuminate the background more. One minor critique was their choice of a disposable plastic box for their matcha tiramisu. The dessert itself was so delightful, but the scotch taped box took me several minutes to open without a knife, and the plastic seemed odd and wasteful alongside all the gorgeous glassware. They gave us a very intriguing pamphlet on the way out about the sake brewing process itself, which only confirmed the tremendous level of attention put into the brewing process. Overall, I’d highly recommend a visit and definitely want to learn more, but would suggest taking your time and getting a tour. After all, the pours are generous and it’s 14% abv!

Phaedra is an excellent guide and host, and described the sake brewing process with precision. Dassai Blue sake (junmai daiginjo) exudes clarity and purity.

Modern, absolutely spotless facility. But honestly, there's not much to see. Of ten employees, there was only one working on making sake during our tour. Otherwise, it's lifeless rooms with empty vats. The tour guide was knowledgeable and did a fine job of explaining the process, but there's not even a video of the actual production. For $50 you get the tour, a small charcuterie box lunch, and a taste of two types of sake (though only one is for sale at this time). It would have been nice to actually see the star product being produced.

A really lovely brewery tour and tasting. Luna was a very knowledgeable and personable guide. Our tasting came with a charcuterie box and the Dassai Blue 50 was delicious - clean, not overly sweet, and refreshing.We can’t wait to come back when they have more sake to offer and single glasses to serve!

The tour is a brief overview of their sake brewing process. It elicits a deeper appreciation for the sake. It is more for educational purposes as opposed to entertainment, so you won't be seeing workers demonstrating each step of the process like a documentary. Dassai Blue is the Love Child of Dassai Asahi Shuzo. Rice isn't the only thing being polished. They have a devout team focused on refining their process so that they may one day rival their Japan location. A tour group consists of a maximum of 12 people and your experience may vary based on factors such as the questions asked by your group. The facility is clean and spacious. Our guide was amicable and possessed knowledge beyond sake. At the time of this review they are offering tastings of the following: Dassai Blue Type 50 Dassai Blue Type 50 NAMA (Unpasteurized) - This means that the sake is raw or fresh. It needs to be refrigerated and enjoyed relatively quickly. It has a brighter and more vibrant profile. Dassai Blue Type 23
