This food truck is parked on 80th and Roosevelt. Great Ecuadorian food. I loved the shrimp ceviche. Not a huge portion which made us sad but it was really tasty. Shrimp was nicely cooked.. So good with rice and the fried corn. The hot sauce is great too. The chiflez are freshly made. I also got the Encebollado de pescado which needed lime for more acidity but the ones they gave were dried out. Reheated the soup the next day with some fresh rice ..I only had a lemon.. the broth is rich and flavorful. I didn't care for the fish too much, some pieces were a bit too fishy/strong. I don't like tuna, so just my preference but I really liked the broth with lil pieces of yuca. That with some rice and chiflez. Pretty tasty..

Got a ceviche mixto and an encebollado. Very fast service and the lady was super efficient and kind. Loved the food. This is my go to spot for Ecuadorian food now

Bollo de pescado is delicious! You must try it, the encebollado is good, pescado frito. Even the Carne asada is delicious. There's not much i can say about Ecuadorian food, it's just delicious but you have to be careful where you eat it or you'll have a bad experience. Many people that come from different parts of Ecuador don't really cook exactly the way the Guayaco's do. But rest assured this food truck does it the right way, the flavors are delicious. Mostly spot on compared to the way my mother cooks. (My mom cooks better though )

I was skeptic at first when my other half took me here, but after my first spoonful of the fish soup I fell in love and went back again today and tried the goat stew and it was great as well. Please try it you won't be disappointed.
First time went there and took my family. The waitress forgot my husband order and then laughs about it. And she acted like everything was a joke. Very unprofessional.
