Get the classic tonkotsu ramen. The flavour, textures, and ingredients were perfect. Felt like everything was there and in the right proportions. Good price for such a quality place.

This place has a Michelin star for a reason. Got the classic tonkatsu ramen and one of the Chashu Tokyo rice balls. The rice ball was fire. Ramen I’ve had a lot of good ramen in my life so this wasn’t the best I’ve had but very good anyway. Great vibe. And one person seating is much faster than a group :)

Went into the restaurant with some strict standards. The tonkotsu ramen was extremely dashi forward, which is odd for a pork broth. The dashi was potentially over cooked too, because there was a slightly metallic finish at the end of the bite. The chashu seasoning did not fully penetrate through, so there was a little gaminess. The eel handroll was decent, but overcharred/burnt. If it's even slightly burnt, the metallic taste overpowers the rest. Gyoza was decent. Good attempt but I expected more from such a highly regarded ramen shop.

My go to spot for Tsukemen in NYC. The dipping sauce base of salty anchovies paired with with refreshing drips of lemon make for a wonderful combination. The noodles of the thicker variant soak in the sauce well.
