we had amazing sushi my son that lived in Japan said that he has not had this type of wonderful sushi since he lived in Japan. the waitress was absolutely a sweetheart. we love Medo
Very rude staff, would never give them my patronage again. Their sushi was overpriced and subpar. Don’t recommend going here.
We had a great experience at Medo! The servers were incredibly nice and attentive, making us feel welcome from the moment we arrived. They were very accommodating, and even though the restaurant recently reopened, everything felt smooth and well-run. We learned they’re in the process of getting their liquor license, which is exciting, and as a bonus, they have electric car chargers conveniently located right in front. Can’t wait to come back again soon!

We had the two omakase’s and both were great. My wife had just enough with the small one and my large one had all that plus some amazing Japanese fish. Also had the Japanese Uni melt in your mouth! Sat at the sushi bar and chatted with Kevin about all things sushi.

A Hidden Gem in Woodstock (The Reopened Medo V2.0 )
After discovering Medo reopened in Woodstock, I can confidently say this is the best Japanese restaurant in the area. What sets this establishment apart is their masterful balance between traditional Japanese cuisine and creative innovation, creating a dining experience that honors authenticity while embracing modern touches.
Exceptional Attention to Detail
The level of craftsmanship at Medo extends far beyond the main dishes. Every element of the dining experience reflects their commitment to excellence. The rice is perfectly seasoned and textured, each grain distinct yet cohesive. The miso soup achieves that delicate balance of umami depth without overwhelming saltiness. Even the restroom maintains the same attention to cleanliness and aesthetic detail that permeates the entire restaurant.
Outstanding Sashimi Quality
The sashimi at Medo is exceptionally fresh and delicious. Head sushi chef and owner Kevin Lin, who trained under Nobu before opening his own restaurant, brings world-class technique to the Hudson Valley. Each cut demonstrates precision and respect for the fish, with flavors that speak to the quality of sourcing and skill in preparation.
Surprising Local Touches
One of the most delightful surprises was the local mushroom tempura - a creative interpretation that showcases regional ingredients through a Japanese lens. The tempura batter achieves that perfect light, crispy texture, while the local mushrooms provide earthy flavors that feel both familiar and exotic. Even more impressive is the accompanying dipping sauce, which elevates the dish with its complex, well-balanced flavor profile that complements rather than masks the mushroom's natural taste.

Located at in Woodstock, Medo represents exactly the kind of hidden gem that makes discovering new restaurants so rewarding. The combination of Kevin Lin's Nobu-trained expertise, the warm hospitality from proprietors David Fletcher and Renee Ross, and their commitment to both tradition and innovation creates a dining experience that exceeds expectations.
The restaurant's Wednesday through Sunday schedule makes it perfect for a special dinner out, and based on this exceptional meal, I will definitely be coming back again. Medo proves that outstanding Japanese cuisine can thrive in unexpected places, bringing world-class dining to the heart of the Hudson Valley.

Medo is back and even better, y’all. 🔥 Their menu is smaller, focusing on quality omakase and izakaya-style bites…much improved quality over quantity IMO. The omakase was gorgeous - every bite meticulously considered and designed. The oyster mushroom tempura I will be DREAMING about. Can’t wait to go back and try more.

Restaurantji Recommends
A man walked into Medo ahead of me, looked around, was ignored by the hostess and walked out. I walked up to her "lectern" and asked to be seated at the sushi bar. There was one seat with no place setting and the people on each side of the seat we're not asked to move by the hostess and they did not respond to my request so I literally had to shove their chairs. The head sushi chef was right in front of me but due to the blaring music was unable to hear me place my order. I sat there over 5 minutes without even a glass of water or having the waitress come over. I placed a moderate order which took 15 minutes to produce. Instead of passing the order to me over the sushi bar as is usual, the sushi chef sent at 12 ft down to the end of the bar away from me and it was another 5 minutes before anybody bothered to pick it up and bring it to me. By that time the hot items were luke warm or cold and the nori was completely soggy. The pieces were incredibly small and exorbitantly priced. after eating what I had I was still hungry and tried to order from the sushi chef but apparently he doesn't take orders from customers and the waitress never came back nor was I able to hail her with my her by signaling with my hand. The pieces were very small and the tuna was tasteless. it was literally the worst sushi I ever had. There had to be 100 to 150 people in there, and the blaring disco music made it impossible for people to converse with each other 3 feet away from each other so there was this enormous noise of voices and loud music that made enjoying a peaceful meal impossible. Any other sushi bar in Ulster County has better sushi. The alcohol liquor bar was larger than the sushi bar and the sushi bar seemed incidental as if it was there for people to snack on while they got drunk. The head sushi man looked terribly embarrassed that I was not seated nor waited on properly. He also seemed very anxious when my food was not brought to me immediately as it had hot items on it. Looking up and down the bar, there were hundreds of glasses which had been emptied but not removed to be cleaned and people's empty meal plates were also littering the space. It was incredible to sit in the middle of such a mess and try to eat a very overpriced and underwhelming. It was also clearly apparent the head sushi chef was unhappy with the way the food he was preparing was left to sit and not delivered to the customers in a timely fashion. It was clear also that he was used to working in a more precisely serviced restaurant. He looked at me apologetically all throughout my meal but he was only 3 ft away and despite my trying to communicate with him he could not hear me over the music and the incredibly bad acoustic control. It seemed that this is a bar with a sushi bar inserted incidentally but that the main attraction was alcohol as the liquor bar was larger than the sushi bar. Usually at a sushi bar I will always make a second and sometimes third order but I couldn't wait to get out of Medo. I had only ordered yellow tail and tuna sashimi, a spider roll and a smoked salmon skin hand roll and could have eaten a lot more but the environment was definitely detrimental as an experience and the food prices were way out of line for the quality and size of the pieces. And I have never seen a more poorly staffed restaurant, despite having spent many many thousands of dollars over the course of my lifetime on sushi all over the world. Medo goes at the bottom of my list. If you want to eat good sushi in a congenial quiet atmosphere where the prices are reasonable and the fish is exceptional go to Hokkaido in New Paltz. The pieces are very large and of excellent quality. the owner is always on the floor in control of everything and the sushi is passed right over to the customers at the bar where there are only six seats. There are about 10 tables, and they do a huge takeout business so it is important to make reservations. I have never eaten better sushi in my life for any amount of money than in Hokkaido. Medo was easily our favorite sushi spot. Everything about it from the quality of the fish to the cozy and elegant vibe made it feel special every time. The miso soup, sashimi, hand rolls, and hot tea were always perfect.
We were sad to hear they closed this weekend. Thank you to the team for consistently delivering such great food and warm service. You created something memorable and we’ll truly miss it.
