I once read a book called The Kindness of Strangers about a guy who hitchhikes across America entirely dependent on the kindness of strangers. This unassuming food truck parked outside the Jefferson Mall encompasses a generosity of spirit as remarkable as that narrative. It's Pay What You Want. The proprietor explained that people's wallets are tight these days so he feels inclined towards helping people to afford a quality cheese sandwich. Most people can still afford a cheese sandwich, I thought to myself, but i didn't say it. It's much more than that, however. He leaves his cash till open on the counter. As such, a patron is faced with a host of moral choices. You can pay what you think the sandwich is worth or what you can afford; in the alternative you can pay nothing or far below. And lastly, as it was made clear to me by the proprietor, some people take full advantage. They order a bunch of sandwiches at a time and pay nothing and some even steal the cash in the till. In my case, confronted with the spectre of a moral quandary, i paid what I thought was a premium. $30 for two sandwiches, a bottle of water and a sprite.
We ordered the chicken Tikka masala and BBQ chicken cheese sandwiches. They were, of course, the bomb. Gooey, melty, crispy, tasty. Everything you could ever desire from a grilled cheese and more.
What a remarkable food truck. It's nice to see that places like this exist in America even though I think the proprietor must be a little daffy to have such a loosey goosey policy.

Large portions, amazing food, and "pay what you want"
Everyone at this place was in a good mood because of Lyle and his fantastic service! We'll go out of our way to visit again.
Dog friendly, outdoor covered (by trees) seating/patio, and low noise.
The chili grilled cheese was 5-stars alone. Don't try the Vegamite though ?

We were lucky enough to stumble upon this gem on a drive upstate today, and were absolutely blown away. Meeting Lyle was an experience; his passion for grilled cheese and connecting with his customers is so genuine. Would gladly take the long way to visit this place again!

Nicest person you’ll ever meet he truly makes you believe in humanity, not a mean bone in his body, I’ve been going to his truck since I was a kid, I stop here on my lunch break all the time, the food is amazing, and the conversation you both have while he’s making your food just brightens up the day,

Ok listen, I leave a lot of good reviews because I like to support places that have good quality food, and I enjoy spreading positivity.
That being said, this is easily one of the best places to eat in the Hudson Valley. These are the best grilled cheeses you're likely to find, and Lyal is by and far the best business owner I've ever had the pleasure of meeting. You are guaranteed a good meal, and good conversation. Almost any time of day you are likely to see a line for his food or at least a few people already seated and eating.
The menu has a wide variety of different grilled cheese options and there are always specials being rotated in and out. There are options with and without meat, some with fruit, some with seafood, etc. This dude is so dialed into what makes a good sandwich good, and you'd be hard pressed to find another spot that is as welcoming as this one. Don't sleep on Put Some Meat On Your Bones!!

my big sister showed me this place a few years ago and honestly it’s one of the best food trucks i’ve had ever. i always get the mac and cheese grilled cheese and everytime i do its always spectacular!!! i love how it comes with kettle chips too!! all the staff is so nice and funny and i always recommend this place to my friends when they want lunch at the JV mall!!
