Yesterday, at the year end event at Coshocton High School I got my usual of Birria Tacos.
Purely, OUTSTANDING.
Whatever you’re doing to keep them from getting super soggy (which isn’t something I enjoy) is perfect. Please don’t change it.
Also: yesterday they were served with green salsa (which I believe was tomatillo and jalapeño.). I’m begging you to do this again…. It was exceptional and balanced the richness of the tacos perfectly. I was sad when it was gone.

We were at the Taco Fest in Cleveland this past Sunday and had the best el pastor tacos from the Don Polo food truck. They had the longest line so we knew they had to be good!
