Not well know in this part of the country but considered a real treat out West. Tradition abounds in this "stew-like" soup of seared pork loin bits, NM red Chile, garlic, cumin, and white hominy, we're adding a side of rice cause some folks to like to mix the two and stuff the flour tortillas that comes with it.
