“I started going to Gibbys several years ago when it was in Collinsville. First day I went I met Carla the owner. Right from the start she greeted me as if I was her family. Not a customer. From Collinsville to Claremore Gibbys has become a staple in the community. The environment, the staff, the food, and the all around experience is top notch! The food is amazing! Best appetizers… Boudin Balls and Fried Zucchini. Best Entree… Love the Voodoo Chicken, Frog Legs, and Cajun Pasta (Can’t Be Beat)! I don’t do desert very often because of diabetes; but that CHOCOLATE CAKE!!! To this day Carla works in house doing everything. Unlike other restaurant where the owner leaves it up to a manager. Not Carla! If you get the chance swing by Gibbys and get a little south in your mouth! Thank you so much Carla and Staff for the amazing experience this week for me and my husband’s 2 year anniversary!”

“Grilled fish tacos are amazing! Like the ones I used to get on the west coast. Huge burritos. They're my kids favorite. My mom lost her teeth but the asada is so tender she loves it in the Ranchero platter. Used to drive to Tulsa for one of the other trucks. This is our favorite now.”

“We waited to be seated, then to be served COLD food. The.plate.was cold and so.was all the food cheese not even warm. Took food back to counter because waiter never came back. Then was brought food that was NOT what I ordered. Very disappointed that I wanted to have dinner in Collinsville this evening. Plenty of staff on the floor but not working if you can't get hot food.or waited on why have them all there. Very disappointed Very unlikely to recommend restaurant in the future. USE to be one of my favorites. Tried to send email to restaurant manager and email address was blocked. only way to review is thru here and yelp.”

“My wife and eat dinner here often. I have an office 3 doors down and it's great when I need a quick lunch. Always good food and lots of choices. Prices are very reasonable.”

“I love the salad bar. I love making my own selection. I love eating the cottage cheese, broccoli, tabouleh, macaroni salad, sunflower seeds, pickled okra along with my lettuce, cherry tomatoes, red onions, … and a piece of my husband’s pizza or calzone.”

“This is a great locally owned business in a cute historic building! I stopped in to have an iced chai and do some work and overheard the owner training a new employee talking about their loving restoration of the building and how all their ingredients are simple and locally sourced and they also sell items from local vendors, and I love supporting places like this. The drink was great too!”

“My husband and I come by here whenever we're in Collinsville and we've never been disappointed with our purchases. I always get an iced coffee and we usually take a few pints of ice cream home, too. They have the best strawberry ice cream I've tasted! Other flavors you don't want to miss: java chocolate chunk, cookie dough, brownie batter bite. Great stuff!”
