Gustav Chophouse and Bar

My husband and I had a fantastic dinner last night, December 30th. It was our first time here and it was my birthday!

We had reservations for 8pm, and did have to wait about a half hour or so for a table, so we happily sat at the bar. At all times the owner as well as the servers were all very attentive to us and let us know that our table would be ready very soon. I believe they were a bit short staffed but the way they handled everything was phenomenal. They were all working so hard to make sure everyone had what they needed, you couldn’t ask for anything more!

When we sat at our table, Suzanne, our server went over the menu with us and gave us recommendations, we really appreciated that as it was our first time here. We started off with the fried brussels sprouts, as well as the autumn harvest salad and a caesar salad, all were delicious. I personally had the autumn harvest salad and it was super fresh, one of the best salads I’ve had at a restaurant. For our main we chose the 24oz New York strip to share, we also got 2 lobster tails, sautéed garlic thyme mushrooms and the chive mashed potatoes, Suzanne recommended these items and we were completely satisfied, it was honestly the best steak I’ve put in my mouth. I am still thinking about it today! We were then offered dessert but at that point we were totally stuffed, Suzanne brought me out a piece of their chocolate cake to go and I must say, it definitely hit the spot after our two hour drive back to the Bruce Peninsula!

My family and I (including 2 kids) decided to go for dinner at this restaurant because is convenient located at the hotel. We knew that without a reservation there was a possibility of waiting time.
Our arrival was approximately at 7:30 pm and according to the hostess, the waiting time was around 20-30 minutes. But for our surprise we waited for 2 hours before being seated.
I don't know the name of our waiters because was never told, there was not even a smile or a menu presentation.
Our food order was prompted taken (we looked at the menu online before been seated), but I've tried order twice for a pop that had never arrived (at least there was water on the table).

By the moment we request the bill, our waiters looked surprise and asked 2 times to make sure, when we said we have the hotel discount because we were staying at the hotel.

Our discount was included but we were charged a party gratitude (6 people, including 1 kid under 7 and, 1 under 10) .

Before this occasion, our breakfast choices was the same restaurant, but after tonight, we'll look for another place and hopefully we'll be treated a little bit better.

We were surprised at how good the food was here. We tried pretty much everything on the menu. Mushroom toast, seafood linguine, and beef stroganoff i’d have to say were standout dishes but everything was seriously great and we ate here every day of our stay at the hotel. The servers did a great job at accommodating for us and were very pleasant to chitchat with. Please change nothing about the menu. My wife and I are looking forward to coming here every year for our anniversary!

We dine here routinely as local residents in Collingwood. We are never disappointed with the food and service. If there is a problem don’t hesitate to ask the staff for help. They will make it right however they can. The steaks, seafood and salads are all great. The wine list is not inexpensive but worth every penny. Highly recommend this place.

Recently had a great evening with a group of 11 for my bud's bachelor party. We had a great table in the back with enough privacy and plenty of space. Our server, Suzanne, was exceptional from her knowledge of the menu, taking orders, table service, and a great personality.

The food was fantastic and we were all very satisfied with the quality and value of the meals we enjoyed. We had 2 tomahawks for the table aside from our individual orders. Although cooked perfectly, the only criticism would be that the tomahawks could have been seasoned a bit better for the price point and quality of the cut. The escargot was great; oyster selection fresh and delicious. I had the bone-in ribeye done Chicago-style which was cooked a perfect medium-rare and easily one the best steaks I've ever had. Had to share it with all the guys and they agreed it was by far the best tasting item we had that night.

Staff were also very friendly and accommodating to take some pics of our group for the memories.

Would be very happy to dine here again.

Over price restaurant. Special fish and rice were super dry and rice not tasty at all. I wouldn’t recommend to waste your money here.

My husband & I decided to celebrate our wedding anniversary at Gustav's Chophouse based on their high google review rating. We were not disappointed! Our Server, Suzanne, was exceptional from her concise description of the menu items to our exquisitely presented dessert, we were greatly impressed. The chef's culinary skills were on full display - the rib-eye steak', prepared Chicago style was simply superior bar none - flavourful, juicy & delectable.

We ate here multiple times while staying at the attached hotel. The food was okay, but the service was incredible! I didn't get our servers' names, but they were all super friendly and efficient.

My mom and I were spending our weekend in Collingwood for her birthday.
We are so happy we came across this incredible restaurant. The food was perfection, the service was exceptional and the owner surprised my mom with an amazing cheesecake for her birthday.
The portions and quality of food can not be beat. I hope they open one closer to Burlington so I can make this my new favourite spot!

My son a I both love a great steak and tonight we were treated to one of the best steaks i have ever had.
Chef selection 12oz NY strip (med-rare chicago) was absolutely delicious.
Will definitely return when Up that way!
