Been dying to try this out and since we were heading for a shopping haul to Vaughan Mills, thought we'd stop by. Had the Chicken-Bacon and the Mortadella-Pistachio sandwiches, along with some flat white coffees. Amazing stuff! Also took the Pistachio double baked, almond double baked, Tiramisu and Apple crumble croissants. All super delicious and just the right crisp!! Definitely try the pistachio double baked if you're ever there!
Bartholomew Bakery is a great find in Vaughan. The location is easy to access and parking is available, which is always a plus.
I want to add something personal here: I’m gluten sensitive, and whenever I eat bread or pastries with gluten, I usually get serious stomach pain. That said, their sandwiches and pastries looked so beautiful, fresh, and tempting that I decided to try them anyway — and honestly, they were worth it.

Their treats literally take you to the heaven briefly when you just bite on it. I would say this is the best pistachio croissant I ever had in Toronto. Poached pare danish pastry and pain au chocolat are absolutely delicious.
Their fuchsia sandwich (the one with pistachio and mortadella ham, I guess) is also really good. will go back and highly recommend this gem!
