We walked in for breakfast today, and the place was packed even though we weren’t staying at the hotel. It was my first time here, so I wasn’t sure whether to go for the buffet or à la carte. Thankfully, our server recommended trying the buffet, mentioning that we could also order eggs through it. That turned out to be a great suggestion there was plenty to eat, especially the fresh fruits and smoothies.
The ambiance was a bit noisy and busy, but still acceptable given how popular the place seemed.
A special shoutout to our server, Leo he was incredibly hardworking. He checked on us frequently to make sure we had everything we needed. One moment that really impressed us was when the table next to ours, who didn’t speak English, seemed confused. A man in a black suit (possibly a supervisor or manager) wasn’t able to explain things clearly to them, but Leo stepped in and solved the issue using simple English and body language. It was quite an impressive moment to witness.
Overall, great service and a solid breakfast experience!

We went to Mosaic@Hilton, recommended by a friend of mine, last Wednesday (6th Aug) for a semi formal dinner with my team. Food was very average, server ( not the turban guy) never came to check my food neither any supervisor or chef. Waited more than 15 mins for our first drink to arrive. Our drinks came in HAND not on tray, it was very unhygienic.
Being a brand like Hilton i expected a better quality of service and a courteous staff.

Popped in for some apps before a flight. The ‘whipped feta’ with arugula on baguette was anything other than whipped. It was a smeared mess, with way too much lemon juice that made it inedible. The server offered to swap it out but we were in a rush.
The bean dip was so dry, and tasted like heated up microwave bean dip from No Frills. Complemented by some canned corn.
Really would not recommend for the price point.

Surprisingly calm and pleasant atmosphere, given it's right by the hotel foyer! I was dining alone but it was not awkward or anything and the service was excellent.
As an airport hotel there is a reasonable possibility of it being a busy with travellers but something we should have been warned of in advance was that the Hilton had a children's dance event going on with what appeared to be a couple hundred children & teens, completely overtaking the lobby and common areas with a noise level of cheers and the clattering of tap shoes on stone floors, not to mention the supporting parents and staff of this event filling up not just the parking lot but the hallways and lobby. When such a large scale and noisy event is booked it seems only reasonable that the restaurant should warn patrons in advance; especially since the restaurant is completely open to the lobby. We met family after their 9 hour trans-Atlantic flight and brought then to Mosaic to get away from Pearsno for a dinner before they got on another 10 hr flight to South America. Instead of having the quality of a Hilton hotel restaurant to enjoy a relaxing meal in we were subjected to the sights and sounds of a children's convention. The food was good, the service was up and down (at one point 2 people asked how the food was but then no one came back to take more drink orders, and we had to flag down staff to order dessert or get the tab). It just seemed the whole place was over-extended in their ability to keep the business running in the manner Hilton guests would expect while renting out their salons to this event.
We were appalled by the prices !
32$ for a Caesar salad with 1 small chicken breast ?
We were charged extra for mix for the drinks ?
Coke and tonic should not be an extra charge when a single shot of alcohol was an astronomical $15 each .

Server was amazing! Food was amazing! The two of us had, the Seafood Linguine, Escargot, Cesar Salad and Butter chicken.
Taste of the food is good but the prices are ridiculously high. I ordered a salad with chicken for lunch and it was 32 dollars after tax. The salad was small even though I ordered the larger version. Better to order in or go off the hotel property.
