1. Fries: Crispy on the outside, chewy on the inside. Crispy is important in a poutine, otherwise the gravy makes the fries soggy. Not too big. Not too small. Some places have jumbo fries, which I don't think works.
2. Cheese: It's tough to get this part wrong. But, believe it or not some places don't use real curd. But, even the curd is a step up because they give you a lot, and the chunks are huge.
3. Gravy can make or break a poutine. Good gravy is a bit subjective. But I think the gravy is perfect. Not too salty. Nice and dark, and they don't drown the fries. I've had poutine where the fries are literally floating.
Is it the best in town? My opinion, yes.

This chip truck gives a very generous amount of the freshest and squeakiest cheese curds ever! On top of an equally generous portion of crispy fries! No complaints. Will come again. A medium size poutine is totally adequate for two of us.
