Good place to grab a quick pre made sushi plate. They've usually only been sitting there 20 mins max before they're turned over. Lots of tasty choices.

Update:
They recently expanded the store and now offer much more then sushi. It's now a market style where you can come in a walk around and look at all their pre made dishes.
I love their poke bowls! Specifically I like the poke salad (no rice). It's $12.95 for a no frills but really tasty bowl. The salmon, seaweed salad, the avocado, the tomato, the mango, all so good and fresh for a simple healthy lunch.
They made really good kimbap which got for lunch for a week straight but then they stopped making it (that was a few months ago now)

They also make sushi to order (slightly higher quality and price then the pre made rolls)

Kibo sushi is good but this place is not fresh and low quality. Try Liberty village Kibo and you'll see the difference. I do not recommend.

The food was great and all the staff were friendly. I really appreciated the tall male server who took the time to explain things clearly, very helpful! That said, the market area felt quite hot, and with some of the food sitting out in those conditions, I couldn’t help but wonder a bit about the freshness.

Used to be my go to sushi place. But they raised the prices for the grab and go sushi…. $8 -$12 bucks for grab and go? I could get something fresh and more for that price. But during the reasonably priced days, the fried shrimp in the rolls were hit and miss, sometimes severely stale.

Sushi Kibo is an excellent local restaurant, I order take out there every week and it is fantastic. I get the red dragon and the salmon premium lover. The staff is always very friendly, and there is never a wait. I would recommend.

Got some take-out sushi for a get-together, and it was absolutely delicious. Ordering and pick-up were easy, and the staff were friendly. This Kibo location is particularly good, best in the area!
