A personal favourite of mine! Ordered their mocha with a blueberry muffin which always tastes great with excellent customer service. This particular location is quite large and has tons of seating for those hoping to work/study here. They offer different espresso beans for your coffee order including decaf espresso.
Pilot Coffee Roasters makes you feel very unwelcome. Baristas are arrogant and rude. I won’t ever go back. Coffee is good but overpriced.
I’d heard about this coffee roaster before but had never actually tried their coffee. If you search for coffee roasters in Toronto, this place usually pops up near the top. I happened to be walking down Ossington and stumbled across it, so I figured it was a good time to finally give it a shot. The vibe of the café is kinda industrial, high ceilings, a wide open layout, and multiple espresso machines built right into the counter, which I’ve honestly never seen anywhere else. There’s also a little retail corner where you can buy their beans. I’ve heard their “Heritage” blend is what they’re known for, and that’s what they use for most of their drinks in the café. The menu has a good range of both hot and cold options. They also have a small pastry selection, though I don’t think they bake them in-house. They had a couple of cold brew towers, which are pretty rare to see in Toronto. As for the coffee itself, it was really good. Smooth, earthy, and topped with a nice layer of espresso foam. I’ll definitely be back, and next time I’m grabbing a bag of beans to take home.

Love this cafe and the latte was pretty good with latte art on it. But the chair was uncomfortable to seat and spend time.
I won’t be coming back here. No big fail in any one particular area, but my visit was one disappointment and aggravation after the other, these tiny events building up to a mental note never to come back here. Plenty of other coffee shops around.
Highlights:
- Spacious, slick decor and space. Big natural light through the massive windows is pleasant.
- The slick spacious decor is what you see; that’s the facade. The tiny aggravations started accumulating right after, hinting at shallow substance to the place:
- Hint: the bathrooms and bathroom area were messy and ugly, out of tune with the main space
- Hint: the pastries available are 0.50-0.75 over what they should be
- Hint: the bathrooms have a dinky, weak air blower to dry one’s hands. A place with this slick presentation should have a paper option, or at least splurge for the Air Blade blower.
- Hint: I specified, twice, that it is “for here”. I come out of the bathroom to find my flat white in a to-go cup. It was evident that this was their default.
- Hint: to fix this, the staffer offered to dump it in a cup. No, we’re overpaying enough for these products for the experience, not the nutritional value. I returned and had to ask her to make me a new one, in a cup. (She did)
- Hint: The pastry (a scone) was so-so, heavy on the sugar. Felt highly commercial; it’s not sitting well in my stomach as I type this
- Hint: I had barely picked up the last bite from my pastry when another staffer swooped in and took away the plate. Give it a second! There’s a pleasure in picking at the small bits left in the plate — a loose blueberry here, a dropped nut there.
- The coffee was from a good bean; adequate to qualify as a 3rd-wave coffee.
An overall feeling of “what did I just drop $12 for here? I barely enjoyed it”.
Great coffee to go. Not the the place you want to hang out in or around. Too cool for skool. But damn their coffee is good.
They changed the recipe to their chocolate chip cookies! Such a shame, less reason to go there now.

Coffee is okay. They don’t accept cash which doesn’t allow homeless people to come in and grab a bite or a drink. Also, their cashless tipping system is a way for the owners to pay the employees less, while getting more in tips from customers. Unfortunate.

Great for work. Typically during weekdays, it is full of remote workers and people are usually friendly. Baristas are too. Their coffee is good but not wow. Recommended for work but not much for social outings/catch-up!
I have been to most coffee shops on Ossington, and Pilot has never disappointed me. Baristas are always friendly and make great coffee. I also like this ambience with lots of natural light.
This espresso-based drink is delicious any time of the day. The baristas are always smiling and nice people. Best of all, the interior is spacious and has plenty of natural light, making it very comfortable. If you want to relax in Ossington, this cafe is recommended.
