I ate at Thai Express a year or so ago. My experience was not very great. The food was pricey, but reasonable for the portions and my expectations but that was where I was disappointed. The food did not meet my expectations. I was not satisfied with the flavor and quality of my Drunken Noodles dish with tofu, the tofu was overcooked and spongy, the noodles were stuck together in globs. I told myself it was probably not their usual quality and I figured I’d try it again sometime. Today I tried it again and bought Pad Thai with chicken for my girlfriend and Beijing beef with tofu for me. I paid $31 for everything and ate it fresh and had the same experience. The tofu was exactly as last year, overcooked and spongy, and the beef was tough, dry, and grayish and tasted like rotten beef jerky. I rarely write bad reviews and i feel bad for the poor guys that run the truck, they are always nice and always busy, I hope this review helps them more than it hurts. Overall, I will not be eating there anymore because of my poor experience.

First time at this food truck. I’ve been to the brick and mortar place in. Corvallis several times and have been happy. Tonight, there was only one employee working who was splitting his time serving beer at the shack next door, taking Thai orders and preparing all the food. I was told there was a 20 minute wait but it took over an hour to receive my food. Our friends were in the same boat. Some of our party ordered food from other trucks and received in a timely fashion. Their food was cold by the time we got ours. The poor guy working the truck was great. He’s working his tail off. Whoever left him there all alone, this review is for you. When it was all said and done, the food was just ok. Mine wasn’t spicy at all and mildly flavorful. We were all pretty disappointed.

Today was my first time getting Thai food and I think it tasted great :) I was pretty nervous ordering because I don't get to eat out much but the service was amazing and made it really easy for me to order! The truck is also gorgeous and there are many options to choose from :D

Have tried a lot of Thai food trucks and have been consistently disappointed. This is the first food truck where the Pad Thai was flavorful and tasted very good. I have always put the House of Noodles as the gold standard but this place gives them a good run for the money and is a nice alternative.
I just tried the best pad thai ever.... OMG!! the service from the young man who served me was excellent. I've tried pad thai at this location many times, and without a doubt, this guy is the best!

Excellent authentic Thai food and very reasonably priced. Had great service when ordering and food was prepared quickly. Ingredients were super fresh. Owners are also great people who have built a nice seating area with these really cool dome igloos with heaters in them. Highly recommend!

LOOOVE it here! My food tonight was delicious as always. As a vegan in a town with little vegan options, they go above and beyond to accommodate that! Everyone I’ve encountered in the last six months has been great but Matthew has been next level my past few visits!!! Great service. Great vibes. Great food! Kudos Thai Express!

Interesting food truck area with garden igloos over the picnic tables. The food was not bad, it could have had a little bit more flavor compared to other Thai restaurants I've been to, maybe provided line wedge so we could add a little lime juice? And that pertains only to the dish that I bought, the spicy fried rice with basil. Of course it was still good.
