Reminds me of the thin crust pizza I used to have in another state . It is absolutely amazing pizza. Love the crust! The seasoning is spot on. The sausage tastes like it is homemade. This pizza makes me happy . So very good. Very unique!

Very disappointing. We’ve been missing Chicago Thin crust Pizza ever since we moved to Portland OR in 95. So, when I heard there was a new food-cart that was from Chi-Town and making Chicago Style Pizza I was so excited. This may have been a bad night but this wasn’t even close to being a true Chicago Style Thin Crust Pizza. First off, the crust was disgusting, yes it was thin (sort of) and it was cut in squares instead of pie shape but that’s where the similarities ended. It was under cooked and was so “floppy” I had to fold it (like a New York Pizza) not crispy at all and there was a river of grease floating on top. The sausage was OK but missing that fennel flavor that a true Chicago pizza has and the sauce was flavorless. Like I said, this may have been an off night but I’m not likely to give it another try.

BEST Pizza in Oregon! Have been looking for Chicago style pizza in Oregon and Finally Found it! Proof pizza is the BEST thin crust pizza around and has tons of flavor! We had a cheese pizza, sausage pizza and the Bosco sticks. All were Great! The pizza reminds me of growing up in Chicago area and eating pizza! Service was fast and friendly. Tons of tables to sit at.

I'd just like to say WOW!! My wife accompanied me on a business trip 2 weeks ago to the Portland area from Chicago and we decided to venture out and explore. We found ourselves in Beaverton at the Breakside Brewery. We had grabbed a couple beverages and decided to grab some lunch as well. Amongst all the food trucks there was one in particular that caught my eye. Right off the bat the fire engine red Proof Pizza trailer appealed to us the most. Come to find out, the lovely couple backed by smiles that owns this truck are from the Chicagoland area and being from the windy city we were all in to see if they brought that specific midwest flavor to the Pacific Northwest. THEY CRUSHED IT!! Their pies are out of this world! We ordered some Mozzarella/Boscoe sticks to start and topped it off with the Wolff Street Pizza which left us utterly speechless. The flavor of the sausage, veggies and marinara was undeniably Chicago style. Such great owners and such a fantastic experience. I will most definitely be back and hope to see Proof Pizza pop up all over and mostly where it's flavor and creators originated from. If you haven't been... GET! ?
Spot on for a Chicago Tavern style pizza. I only tried the cheese so far because of my son, but it had good flavor. very herbaceous. Just right thinness and crispness for the style.

Excellent vegetable and pepperoni pizza in Beaverton. Nested inside the food truck area next to Farmington street. The owners Brannon Britney were so nice and welcoming you with bright/happy smiles. We had a running team dinner there ??
