Had I read some reviews on this spot I would have avoided it. I don't know if I got the end of a batch or the cook forgot my food on the grill but "dry and crispy" doesn't quite convey my experience my gyro was straight up crunchy... I felt like I was eating dog treats in flatbread. Portion size was significantly less than I would have hoped for $14 other places in town offer much more sizable portions +more ingredients for the same price or less. Had the meat not been so overcooked it would have been an ok gyro nothing that fancy.
After looking through other reviews I assume I'll be getting some kind of snarky response from the owner who based on previous responses to others seems to not be super nice and also very defensive which says a lot.

I’ve had falafel, hummus, and baklava from Gyro Power in Prineville and I enthusiastically recommend all three of these items! The falafel sandwiches are perfect. The falafel balls are crispy outside, almost creamy and moist inside, with excellent flavor. The lettuce and tomato have been fresh and crisp, and the aioli was a great twist on the usual tzatziki that most falafel sandwiches come with. The hummus is nicely garnished with olive oil, and the pita to dip into it is toasted just like it should be. Adding some veggies to eat with the hummus is a healthy addition, and once again they were freah and crisp. The baklava is to die for. It’s well-layered and has the perfect density so that it doesn’t fall apart when you take a bite. Gyro Power has the best Mediterranean food I’ve had in years! I can’t wait to go back for more!

Looks like this food truck used to be in Bend but is in Prineville now at least for the time being and...thank God tbh. I've eaten there three times now since seeing it like a week ago and it has been great every time. I had not had decent Greek food since moving from California over a year ago and it's probably my favorite type of food.Tbh I've pretty much gotten the same things every time I've gone because I don't eat meat (the falafel wrap) but I feel like I could eat this every day tbh.It's the same guy running the kitchen every time I've been and he's cool. I'd recommend this place to anyone wanting something fresh and healthy. It can be tricky in this area

BEST Gyro in Bend (trust me, I know that doesn't say much, since it's like the only place that makes an authentic Gyro in Central Oregon), but really, it was delicious. The lamb was cooked to perfection, perfect amount of feta cheese, not too many onions, tzatziki was delicious. Just a great Gyro all around, worth every penny. And to the dude that said he waited 15 minutes for a kebab, come on man, 15 minutes is not long at all for decent tasting food. If you are not happy with the wait, go to McDonalds...so pathetic - if you ain't first Ricky, you're last!

I ordered the steak kabob for $11 plus a 2.20 tip, so $13.20. There were no lines so I figured the order would be finished pretty quickly. About 15 minutes later I got the steak kebab. I was surprised to see four or five little bite sized chunks of steak on a stick and all of them had a a stiff chunk of fat along the edge. Total rip off for the price. I’ve never tried their other food, but I don’t recommend the steak kebab.
