The food is very good but it's SO NOISY that you have to scream to be heard. To make it even worse is the music which is also WAY TOO loud. Sadly we will not be back.

I very much wanted to like this restaurant, but sad to say I was left rather disappointed.
From the start, the hostess was quite rude, with an attitude that felt very much like I was inconveniencing her by being there. That being said, she sat me quickly at the chef’s counter.
The restaurant was extremely loud, to the point where I struggled to place an order based on noise alone.
My server was very polite, friendly and knowledgeable, and at the beginning very attentive. However, after bringing out my first dish, I was left waiting for 30+ minutes for my main courses to arrive. In that time, no one checked in, or seemed bothered to help in any way. In fact, the majority of the staff seemed at best indifferent, and at worst angry to be there. Everyone seemed very stressed and unhappy working there.
When I was able to flag down my waitress, I mentioned that I was in a bit of a time crunch and would like to pay my check while I waited on my main course to arrive (now approaching the 40+ minutes mark). She brought the check and talked to the kitchen to expedite my order, but the food still didn’t come out.
When the food did finally come out, it was all packaged up to go, which I didn’t request. I was in a rush but not requiring anything to go. All my food was boxed and bagged, but I was not asked at any point whether I wanted it to go. Additionally, I was not provided with any silverware or napkins.
The food itself was very tasty, seasoned and cooked perfectly. But at the same time, despite a higher price tag, and glowing reviews, I was somewhat underwhelmed. The flavors were very good but not anything special or noteworthy. Just well executed steaks and sides.
At the end of the day, between the attitude and indifference of the majority of the staff, the long wait time, the order packed to go without consent, nor utensils and napkins, and the significant price tag ($150.00 for a single seat), I was left disappointed and underwhelmed. I will not be returning to this establishment, especially given the exceptional quality and service at other local steakhouses, like Bos Taurus.

In area from Boston, Asked ChatGPT “what’s the best meal in the area for our celebration dinner - our son just got married this past weekend” and Rancher, Butcher, Chef was the recommendation. Best meal the two of us have EVER had. Thank you for making our post wedding meal so memorable. Your staff is perfection and your food is outstanding! (Highly recommend the Gunslinger)

I’ll start by saying you MUST make a reservation - probably 2-3 weeks in advance but maybe even 4 weeks.
In our case, we made a 7:45pm reservation 4 weeks in advance, with dining seating (not bar or butcher table) because we had a date night we were really looking forward to and they are infrequent with two kids at home.
On the day of our date night, a beautiful 85 degree day, I received a text that said “Are you looking for an outdoor patio table tonight? It's looking like a beautiful night out there! Outside is first come first served so I'll get you a patio spot closest to [your reservation time] as possible.”
This leads one to believe you’re guaranteed a space inside and if one of the 5 outdoor tables is available, you may have it.
Upon arrival, as the Oregon weather can be quite sporadic, it was thundering, drizzling rain and occasional instances of heavy showers. We obviously thought it’s a given that we would be seated inside. Not exactly the case.
A quite awkward situation occurred where nobody was being seated outside except for us because there was “no availability inside” yet we still had a 4-month reservation for dining seating and should have some kind of priority correct???
Thankfully one table outside is covered by an overhang so you only get hit with parts of the rain when it’s really coming down, which is what we ended up doing and the rain thankfully let up for the 2nd half of our meal.
Overall, we got the vibes that we were an inconvenience to the restaurant and they did have a large 16-top party that came in as we arrived so it was a bit of a zoo and the staff seemed overwhelmed.
Our waitress was terrific and I think made the best of a very awkward situation. The food was also delicious and amidst the chaos, it did get served in a reasonable time frame.
Is it the best restaurant in town - which is what we were expecting based on making a reservation a month out and all of the glowing reviews - no it is not, and there a multitude of places in Bend, OR where you can have a more seamless dining experiences, with terrific food, and probably for a fraction of the price. Our bill was around $320, we tipped well, and I still just can’t get over the fact that we were treated as a wrench in the operations of the restaurant from the moment we arrived.
You only get one chance to make a first impression when it comes to dining and speaking as a couple that really hopes their dining experience goes well on the few date nights we get out, I think this place royally dropped the ball. It won’t be somewhere we try again or recommend to others but I do hope they rectify some things based on this review because there is potential it could be a great place that would thrive in this small community.

All of our food was outstanding & they were very accommodating of food allergies. The ambiance with the open kitchen is fun. Nice place to go if you want to dress up, but it isn’t stuffy/pretentious and you can definitely still wear jeans.

Really special experience! Do plan to drop some $$$$ here. But I've never had better steaks. The Iberica is the best meat I've ever put in my mouth. Drinks are awesome. Very nice place.

RBC had some excellent service and the food was pretty darn good too. We got the A5 Waygu and did not feel like it was worth it. They bring out a hot salt stone and you are to finish the cooking yourself. Unfortunately, the result is a thin steak cooked to a medium gray. The taste was good and the quality was great, but the presentation was gimmicky and unappetizing. Rest of the food & drink was great with solid drinks too!

Amazing!!! What a delicious meal. Not only did the host slip us in right away at the bar but the staff was so friendly, professional and knowledgeable, the food was incredible and the ambiance unique and nice. Can’t recommend enough. We were only in town for one night and it was well worth the one stop we made.

Stop! Before you say there’s not good restaurants in Bend, go here!! THIS place is a gem! A lot of high end restaurants in town seem to almost copy each others menus.

Clay, our server, navigated us through the menu with knowledgeable insight on both food and drink. We took all of his suggestions and they didn’t disappoint. We had the Babette medium rare, along with the Radicchio (best radicchio salad I’ve ever had) & Endive (incredible) salads, potato w: spicy marinara with some yum topping. The horseradish sauce was my favorite out of the 3 we ordered. The chefs left the punch of the horseradish, which often gets too toned down. The cab and Teroldego wines complemented everything. Cocktails were made with care! Butterscotch dessert was sublime. Best birthday dinner ever! What a surprise! Service and food was all phenomenal! Great music selection! Beach Boys, Stevie Wonder, Steely Dan. All of it…Thank you! We’ll be back.
