I enjoyed a friend’s lovely long birthday celebration meal at Castor last evening and the food, wine, cocktails, special dessert…everything was perfect. This team has a heart for hospitality and took great care of us. There is a lot to be said for management investing in staff with experience, and you can see, taste and feel that at Castor these days. Besides these special occasions meals, I’ll just pop in for a casual lunch, or a happy hour drink and snack at the bar and enjoy the same level of hospitality. It’s one of those “third spaces” we all need in our lives. Get out and spend time with your people and don’t worry about cleaning up your house. And oh my that cornbread tres leches cake was divine!

⭐️⭐️⭐️ (3/5) – Good, but not great.
The beef tartare was a knockout — I’d happily go back just for that. The gumbo and risotto under the scallops? Mushy, bland, and basically pablum that had lost its way. Cocktails were sugary enough to induce a toothache, and the bartender was a human megaphone, filling the room with nonstop chatter that made talking at our table impossible. Castor has potential, but it needs more texture on the plate — and less volume behind the bar.

Ordered a filled mignon median rare and the steak they brought me was NOT mignon. Spend about 140 with a family of 5 so I guess it wasn't bad. Service and drinks were good, but it the ambiance was off putting. The food was alright but it didnt taste too great. Safe to say I will NOT be dinning here in the future.

Started our evening with a set of amazing and unique cocktails. Our server was very helpful in describing the details of the dishes to help us choose. The shrimp with grits was wonderful textures and spices - highly recommend it. The pork chops must've been great since my partner ate all of it before I could try it :)

Last night’s dining experience at Castor was nothing short of excellent. The service was welcoming, attentive, and genuinely fun, setting the perfect tone for the evening. From starters to dessert, every dish was flavorful, satisfying, and beautifully prepared. I’ve dined at Castor many times and can honestly say I’ve never had a bad experience. The consistency in quality and hospitality keeps me coming back. Right on to a wonderful dining experience in Corvallis!

Was excited to try this place for the first time. We had reservations coming in and had pretty high expectations looking at previous reviews..The service was subpar to be honest. Once we ordered our food it took nearly 50 minutes to recieve it, keep in mind it really wasn't that busy. I ordered the filet mignon, when it arrived I was very disappointed by the lack of flavor/taste and overall appearance of the dish for the price. Would not recommend.

Wonderful restaurant! I had the beef tartare, which was exceptional and my co-worker had the shrimp and grits which he devoured. We sat at the bar because there weren't tables open when we arrived. The bartenders couldn't have been more hospitable and nice. Definitely saving this place for when I'm back in Corvallis.

The staff and atmosphere are very nice and the drink list is good. The food has been a bit less interesting this year than last year but the friends we bring still have a good time.
Proof of the saying that fine dining guarantees a bad meal. Unbalanced, unsubtle dishes loaded with salt and fat.
The Salmon chowder ingredients tasted stale and gave me a stomach ache. The bread was mediocre and dry. The main dish (pork chops) was too fatty and rich, and the accompaniments were also too rich and oily. The corn didn’t taste fresh and it was buried in heavy sauce.
The chunk of park was enormous; I boxed most of to see if I could take it home and salvage it. Maybe chop it up and add some fresh tomatoes and garlic.
The steak tartare my companion had was pretty good, and the green salad was very good. The house wine was decent, and the crème brûlée met expectations.
Service and atmosphere were fine.
I wouldn’t be so harsh if the place were cheaper. But I wouldn’t eat the meal I had here again even if it were free.

Excellent all around - haven’t had a nice meal out in a while, and Castor was great. You need to have shrimp and grits - not the typical cheese grits, (not that there’s anything wrong with that), but more a Louisiana style. Big, tender shrimp in a great sauce, so happy to see it served this way. Service was excellent, glad I popped in early as it started to get busy on a Monday! Will definitely be back and highly recommend.

I certainly don't order steak every week... So I kind of know not of what I speak but...
The steak I got there, expensive though it was, was way the best steak I've had in over 20 years. Absolutely incredible as well as the potato that came with it. I hope my wife will treat me to another one.
