Zero waste, great coffee and wonderful company.We all need to appreciate the ethos of ‘slowest coffee in town’ and continue to support local wizardry. What an experience! Rogelio was so cool in sharing his passion and knowledge about coffee and mylks. I thoroughly enjoyed the mylk (date + pumpkin seeds) which added the perfect sweetness to the latte! Rogelio got the perfect temp to the drink (140deg) which is drinkable coffee. It allowed me to enjoy it immediately and savor it. Service is personalized and unique. Coolest tip ... zero waste shop! Enjoy the comforts of your cup at the shop!

Today something so ordinary as a matcha latte was a moving experience. The texture and flavour were so dialled in, you take the first sip, and it makes you close your eyes. And it felt so healthy in the body. Not only were the nut milks organic and made in-house, but even the kind of water used was thoughtfully selected. You could feel the love in the preparation. This was my first visit to Pájaro, and my day feels like a success simply because I was fortunate enough to find this spot.

Wow, what a find. I didn’t know places like this were in Portland. It’s like old Portland, but way more chill. No throw away cups (bring your own if you have one). Everything is plant based and made from scratch. Remineralized water used in all drinks. I had a latte with fresh pumpkin seed & raw hazelnut milk, a bit of date and pinch of salt and living water. OMG. It was perfect!

While the coffee was quite good, it took 25 minutes of rambling and awkward conversation just to order. He only had one type of milk that was not pasteurized and had no other options. The store wasn’t very clean and there was no menu either. Overall, probably an off day based on the other reviews.

Rogelio was awesome! Come here for more than just a cup of coffee. All natural ingredients and delicious homemade milks. I ended up getting a banana smoothie with coffee and it was incredible!

Thank you to Rogelio for the best experience in tasting truly organic freshly made iced matcha drink! This place is open from 2pm-4pm as stated on their sign in front so call ahead or visit if hours change. This place has a feel-good vibe and makes you feel more educated in the importance of knowing what you are putting in your body. I am lucky to have been able to experience this wonderful drink and I look forward to coming here more often! Couldn't leave Portland without visiting here!
