As a vegetarian, the tofu sisig was recommended to me and was absolutely delicious and so flavorful! Very nice and welcoming employees. Inside there is only seating for 6 people with some outdoor seating options as well - just something to be aware of. Was able to grab a seat inside to enjoy a cozy meal. Will be coming back in the future!

Ate at Kuya, the kare kare meat is so hard. Sorry for this review, but we pressure cooked it again and still matigas.
Great tasting food. Had a craving for crispy pork (lechon) and a quick search cake up with this place. There's not much room to dine in, only two small tables... But the lack of space is made up by the great tasting food. I ordered the pork belly and the crispy pork. Both were delicious. Will definitely be coming back next time I'm in the area.

I’ve heard this place before but never tried it till now. The Sinugba was excellent but the portion is small. Please do not skimp the meat. Charge more if you have to compensate the meat price but I beg you not to serve kids portion. The Bihon pancit and the Lumpia was perfect. Also please add a online ordering to your website. Thank you and I will definitely come back again

Had some of what is probably the most authentic Filipino food in the Portland area. Rex and his staff keep the food as flavorful and unique as it could be and I’m so glad I came across this place. Had the Pork Sisig and the Lechon Kawali with their own homemade sauces and I’m surprised I almost finished all that food on my own. Highly recommend!

Rex is a wonderful host. We REALLY enjoyed the BBQ tofu and the tofu sisig. Flavorful and super delicious. Worth the trip!

Kubo is a warm and welcoming Filipino spot in Bethany with delicious comfort food and amazing hospitality. The Pancit Palabok is a standout—savory and rich, with a flavor profile that reminds me of Pad Thai, and as a rice noodle fan, I loved it. The Beef Sinigang is perfect for a cozy meal, with its tangy broth and tender beef served with rice. The owner is incredibly attentive and makes you feel like family. There’s so much more on the menu I can’t wait to try next time!

Kubo in Bethany is a hidden gem. From the moment we walked in, we were greeted with warm hospitality. Rex is an absolute treasure – his attentiveness, spot-on recommendations make every visit a delight. Rex has even been generous to provide samples but sometimes that makes it all the harder to make a decision. Honestly, everything on the menu is so delicious, it's hard to choose.
Our absolute favorites are the Dinuguan (pork in pork blood), which is often called "pork in chocolate pudding" as the description may turn people off. But don't let the description fool you, it's incredible! We also love the Lechon Kawali (crispy pork belly) and the sizzling pork sisig. The Laing is so flavorful. And let's not forget the Halo-halo – it's a meal in itself, even though it's considered a drink! Dessert 🍨 and drink in one.
Rex is so kind, and even though the location is pretty small, which is unfortunate for our large family, which is why we don't frequent it as often as we'd like, but it's ambience is cozy and welcoming. However, this is one of my favorite places to sneak away to.
If you're looking for authentic and flavorful Filipino food with exceptional service, Kubo is a must-try. We can't wait to go back. On occasion we do take out but nothing is like conversation with Rex whose passion towards his craft and home country is undeniable. Thank you for bringing this delight to Bethany.

The owner suggested the we try Kare Kare which was absolutely delicious! We also had the lumpia, lechon, and cassava cake. The food was all super flavorful! The lechon was cooked perfectly, crispy outside and tender inside. The owner was really friendly. Overall we had a great experience and will definitely be back to try some more!
