Well I did not expect to enjoy a place calling themselves a Louisiana kitchen in Salem Oregon but wow what a nice taste of home probably the best hurricane ever had outside of Pat O'Brien's anywhere in the country and I can't believe I'm suggesting the cheese curds but I think you have to

If your in the Salem area or traveling through to the coast, this is a must stop! The food is absolutely insanely delicious. We had one of the owners serve us and he took the time to give us a history of how the restaurant started. Authentic Lousianna style sauces and the chicken blows chick filet out of the water. Amazing cocktail selection. This is a must stop for your family!

Stopped by Noble Wave Louisiana Kitchen with my team after a shoot and it was exactly what we needed. We ordered burgers, sandwiches, and the beignets, and everything was so good. The food was comforting and filling, and the beignets were the standout — warm, fluffy, and delicious. Relaxed vibe, great spot to wind down after a long day. Would absolutely come back.

Bartenders/servers were a little pre occupied and inattentive even though the restaurant was nearly empty.
That said, the food was fantastic and the ambience was quite nice. Having fried alligator for the first time in years was very nice. And it was cooked properly to boot. Poboy was fantastic. Perfect bread. They understand Cajun food for sure.

The burger was decent, the fries that came with my meal with cooked about 5mins too long and were bricks, the wife's catfish was not good at all. Way over done and breaded twice as much as needed. We also tried the spicy fried pickles, they were over salted to death. The staff was nice and it was atmospherically pretty.
